I made these for the first time on a Tuesday night when I had half a bag of frozen corn, a block of feta that needed using, and zero desire to turn on the full oven. That’s honestly how most of my best recipes happen. The harissa butter was a last-minute idea — I had a jar open from the weekend — and now I can’t imagine making these without it.
The setup is simple. You mash harissa into softened butter, toss that with corn and crumbled feta, and spoon it into halved mini sweet peppers. The whole thing goes onto a toaster oven baking sheet and roasts at high heat until the peppers blister and the filling gets a little golden on top. It takes maybe 10 minutes of actual work.
Mini sweet peppers are one of those underused vegetables that really shine when they get some high heat on them. They soften fast, caramelize at the edges, and the skin gets just wrinkly enough to feel properly roasted without turning mushy. The feta does this thing in the oven where it goes from crumbly to slightly creamy in the filling but crispy-edged on the outside — which is my favorite texture. Fresh herbs and a squeeze of lemon at the end are not optional in my opinion.
If you don’t already have a reliable toaster oven that hits and holds 425°F, this recipe is a good argument for getting one. High-heat roasting in a full oven for 12 stuffed peppers feels like overkill. The toaster oven does it in the same time with less preheating and no heating up your whole kitchen.
Toaster Oven Crispy Harissa Butter Roasted Corn and Feta Stuffed Sweet Peppers with Fresh Herbs
Sweet mini peppers packed with roasted corn, creamy feta, and a hit of harissa butter, then blasted in the toaster oven until the filling is bubbling and the pepper skins blister just enough. Ready in under 30 minutes and genuinely good.

Instructions
-
Heat your toaster oven to 425°F on the bake setting. If yours runs cool (mine did for years before I figured that out), bump it to 430°F.
-
In a small bowl, mash together the softened butter, harissa paste, grated garlic, and smoked paprika until it's mostly combined. It doesn't need to be perfectly smooth.
-
Pat the corn kernels really dry with a paper towel. This matters — wet corn will steam instead of roast and the filling ends up soggy.
-
Mix the corn and feta together in a bowl. Add half the harissa butter mixture, the olive oil, salt, and pepper. Stir it around until the corn is coated.
-
Arrange the halved peppers cut-side up on a toaster oven baking sheet in a single layer. Rub or brush the inside of each pepper half with the remaining harissa butter.
-
Spoon the corn and feta filling into each pepper half, pressing it in gently so it mounds a little. Don't be shy with the filling.
-
Slide the pan into the toaster oven and roast for 17 to 20 minutes, until the pepper skins are soft and starting to blister at the edges and the feta has gone golden in spots. Every toaster oven is a little different, so check at 15 minutes.
-
Let them cool for two or three minutes — the filling is molten right out of the oven. Squeeze the lemon juice over everything, then scatter on the parsley, mint, and red pepper flakes if you're using them. Serve immediately.
Notes
Harissa brands vary a lot in heat. If yours is on the mild side, add a pinch of cayenne to the butter mixture. If it's fiery, dial back to 1.5 tablespoons.
Leftovers keep in the fridge for up to 2 days. Reheat them in the toaster oven at 375°F for about 6 minutes rather than the microwave — they stay a lot less sad that way.
You can assemble these a few hours ahead and keep them covered in the fridge. Just add a couple extra minutes to the cook time if they're going in cold.
This is also good with a dollop of plain Greek yogurt on the side for serving, especially if your harissa runs hot.
