I’ll be honest: I didn’t really like Brussels sprouts until I started making them in my air fryer toaster oven. Roasted in a regular oven they were fine. Steamed? No thanks. But something about the concentrated hot air circulating in that little oven changes them completely — the cut sides get this deep caramelized sear, the outer leaves go full-on crispy, and the inside stays tender. It’s the texture that was always missing.

This recipe keeps things simple. Olive oil, a few spices, and a quick honey-soy glaze that takes about 30 seconds to throw together. The smoked paprika is my one small opinion here — it adds just a little depth without making the dish taste like anything specific. You can skip it, but I wouldn’t. The whole thing is done in under 25 minutes, which puts it firmly in the weeknight rotation. I make it at least once a week, usually alongside whatever else I’ve got going in the oven.

If you’re working with a newer machine, you’ll want a reliable air fryer toaster oven that actually holds its temperature at 400°F — some of the cheaper ones fluctuate and you end up with uneven results. One thing worth knowing before you start: size matters here. Halve the sprouts through the stem so they have a flat cut face — that’s where the best browning happens.   1. Preheat your air fryer toaster oven to 400°F on the air fry setting. Let it run for at least 3 minutes so it's actually hot when the sprouts go in — this matters more than people think.

  2. While it preheats, trim the rough ends off your Brussels sprouts and slice them in half lengthwise through the stem. Any loose outer leaves that fall off? Keep them. They'll turn into little crispy chips in the oven and they're honestly the best part.

  3. Toss the halved sprouts and any stray leaves in a large bowl with the olive oil, salt, pepper, garlic powder, and smoked paprika. Get in there and toss until everything's coated. Don't skip drying them first if they're wet from washing — moisture is the enemy of crispy.

  4. Arrange the sprouts cut-side down in a single layer on your air fryer basket or the oven's wire rack lined with the included pan underneath to catch drips. Don't crowd them. If your oven's small, do two batches rather than piling them in.

  5. Air fry at 400°F for 14-16 minutes, shaking the basket or flipping the sprouts once around the 8-minute mark. You're looking for deeply golden, charred edges on the cut side — not pale yellow.

  6. While the sprouts are in their last few minutes, stir together the honey, soy sauce, and rice vinegar in a small bowl. It's a quick glaze, takes about 30 seconds.

  7. When the sprouts come out, immediately drizzle the glaze over them and toss to coat. Transfer to a serving plate, scatter over the scallions and sesame seeds, and eat them right away. They lose their crunch fast, so don't let them sit.

Notes

Dry sprouts = crispy sprouts. If yours were just washed, pat them with a paper towel before tossing with oil. The honey-soy glaze is optional — the sprouts are also great plain with just a squeeze of lemon at the end. For a little heat, add a pinch of red pepper flakes to the glaze. Leftovers reheat well on the air fry setting at 375°F for 4-5 minutes; they won't be quite as crispy as fresh but they're still good.
