My toaster oven gets used almost every day, but this flatbread is the recipe that actually makes me glad I have one. It started as a fridge-cleanout situation — a block of halloumi getting old, grapes no one was eating — and now I make it on purpose. Regularly.
The grapes are the part people find surprising. Raw, they’re fine. Roasted, they collapse into something almost wine-like, sweet and concentrated. Against the salty, slightly squeaky halloumi and the crunch of walnuts, it’s a combination that sounds fussy but takes almost no effort. If you’ve got a toaster oven baking sheet that fits your oven properly, even better — the flatbread gets crispier from underneath when it has solid contact with the pan.
The whole thing bakes at 425°F, which is hotter than a lot of toaster oven recipes call for. That’s intentional. You want the halloumi to get actual color on it, not just warm through. Halloumi that’s only warm is rubbery and kind of sad. Halloumi with golden edges is a completely different thing. If you’ve been on the fence about picking up a reliable toaster oven that can hit and hold higher temps, this recipe is a pretty good argument for it.
Serve this as dinner with a simple salad, or cut it into smaller pieces as something to put out when people come over. Either way, it’s gone fast.
Toaster Oven Crispy Halloumi and Roasted Grape Flatbread with Honey and Walnuts
Salty halloumi, jammy roasted grapes, crunchy walnuts, and a drizzle of honey on a crispy flatbread — this comes together in about 25 minutes and tastes genuinely impressive.

Preheat your toaster oven to 425°F. If yours runs hot, 415°F is fine — you just want it fully heated before anything goes in.

Toss the grapes with 1 tablespoon of the olive oil directly on a small toaster oven baking sheet or the oven tray. Spread them out so they're not piled on top of each other. Roast for 10 minutes. They'll start to blister and get a little jammy. Pull them out and push them to one side of the tray.

While the grapes roast, brush both flatbreads lightly with the remaining 2 tablespoons of olive oil. Lay the halloumi slices across each flatbread, overlapping is fine.

Slide the flatbreads onto the rack (or tray) alongside the grapes. Roast everything together for 8 more minutes, until the halloumi has some golden spots and the flatbread edges are crisp. Keep an eye on it after minute 6 — toaster ovens vary a lot.

Pull it all out. Scatter the roasted grapes over the flatbreads. Add the broken walnuts, a pinch of thyme, and a few cracks of black pepper. Drizzle honey over both, starting with about a tablespoon each and going from there.

If you're using arugula, pile a small handful on right before serving. The warmth wilts it just slightly. Slice and eat immediately.
Notes
Halloumi doesn't melt — that's the whole point. Don't skip preheating the toaster oven; a cold start gives you steamed flatbread instead of crispy. Red grapes work best here because they're sweeter and hold together when roasted. Green grapes get a bit tart. If you want something more substantial, a smear of ricotta or plain cream cheese under the halloumi before roasting is really good. Leftovers reheat okay at 375°F for a few minutes but honestly they're best fresh.
