I’ve made broccoli roughly a thousand different ways and this version — garlic, Parmesan, a little lemon — is the one I keep coming back to. It’s not complicated. But the air fryer (or a hot toaster oven) does something a big sheet pan in a regular oven just can’t replicate: it gets those floret edges genuinely crispy and a little charred while keeping the insides tender. That contrast is everything.

The trick that took me embarrassingly long to figure out is slicing the garlic instead of mincing it. Thin slices roast into these little savory crisps that stick to the broccoli and taste almost nutty. Minced garlic at this heat just scorches and goes bitter. Also — dry broccoli. If your florets have any water clinging to them, you’ll steam them instead of roasting. A quick pat-down with paper towels is worth the extra thirty seconds.

You’ll need a decent air fryer basket or, if you’re going the toaster oven route, a small sheet pan that fits your toaster oven — I use a quarter-sheet, which slides into pretty much every countertop oven I’ve tried. Both methods work. The air fryer is maybe two or three minutes faster and the edges get slightly more jagged and crispy. The toaster oven gives you a bigger batch in one go, which matters if you’re feeding more than two people.

This works as a side dish for basically any weeknight dinner, but I’ve also eaten it straight off the tray standing at the counter, which I think is the highest compliment you can give a vegetable recipe.

Prep

  1. Dry your broccoli really well. This is actually the most important thing. Wet florets steam instead of crisping up, so pat them with a paper towel after washing or let them air-dry for a few minutes.

  2. Toss the florets and any stem coins with the olive oil, sliced garlic, salt, pepper, and red pepper flakes in a large bowl. Make sure everything's coated — no dry spots.

Air Fryer Method

  1. Preheat your air fryer to 390°F for 3 minutes.

  2. Add the broccoli in a single layer. Don't crowd the basket — cook in two batches if you need to. Crowding is the enemy of crispy.

  3. Air fry for 8 minutes, shake the basket, then scatter the Parmesan over the top of the florets.

  4. Cook another 4 to 5 minutes until the cheese is golden and the floret edges are dark and a little charred. That char is what you want.

  5. Transfer to a plate, hit it with the lemon juice and lemon zest, and serve immediately.

Toaster Oven Method

  1. Preheat your toaster oven to 425°F on the roast or convection-bake setting if you have it. Convection makes a real difference here.

  2. Spread the broccoli in a single layer on the toaster oven tray or a small sheet pan. Give the florets a little room.

  3. Roast for 10 minutes, flip the larger pieces over, and sprinkle the Parmesan evenly across everything.

  4. Return to the oven for another 6 to 8 minutes until the cheese is crisped and spotty brown and the broccoli edges look almost too done. They're not.

  5. Pull it out, finish with the lemon juice and zest, and get it on the table while it's hot.

Notes

Sliced garlic is better than minced here because it gets crispy and almost chip-like against the broccoli — minced garlic just burns. If you don't have Parmesan, a sharp pecorino works great. Leftovers reheat well in the air fryer at 375°F for 3 minutes, though they're never quite as crispy the second day. You can prep and toss the broccoli up to 4 hours ahead and keep it in the fridge — just don't add the Parmesan until you're ready to cook.
