Okay so I’ve made wings a lot of ways — baked, grilled, even deep fried once in a college apartment that I don’t want to talk about. The air fryer version is genuinely my favorite. Crispy skin, juicy meat, no vat of oil to deal with. It’s become a regular Friday thing at my house, which says a lot.

The secret is two things: really dry wings and baking powder in the rub. The baking powder sounds weird but it actually works — it draws out moisture and creates this almost lacquered skin that crisps up beautifully. I was skeptical the first time I tried it. Now I won’t make wings without it. You do need a good air fryer with a roomy basket if you want to do this in one batch — crowding is the number one reason wings come out steamy instead of crispy.

The toaster oven method works great too, especially with convection. A wire rack that fits your toaster oven pan is kind of essential here, because it lets the heat get underneath the wings. Without it you’ll end up with a soggy bottom side. I use the rack I already had from my toaster oven setup — nothing fancy.

The garlic buffalo sauce is quick and a little sticky and honestly just really good. It’s got enough butter to round out the heat from the hot sauce, and the honey keeps it from being one-dimensional. If someone in your house doesn’t like things spicy you can dial it way back, but I’d keep at least a little kick — plain wings feel like a missed opportunity.

Instructions

Prep the Wings

  1. Pat your wings very dry with paper towels. Like, really dry. This is the single most important step — any moisture on the skin is the enemy of crispiness.

  2. In a large bowl, toss the wings with baking powder, salt, garlic powder, smoked paprika, and black pepper until every piece is evenly coated.

  3. If you have 30 extra minutes (or up to overnight), spread the coated wings on a rack over a sheet pan in the fridge, uncovered. They'll get even crispier. But you can skip this and go straight to cooking — they'll still be great.

Air Fryer Method

  1. Preheat your air fryer to 380°F for 3 minutes.

  2. Arrange wings in a single layer in the basket — don't stack them. Work in two batches if needed.

  3. Cook at 380°F for 22 minutes, flipping halfway through.

  4. Flip to 400°F and cook another 5-6 minutes until the skin is deeply golden and crackly. You'll hear it sizzling. That's the goal.

Toaster Oven Method

  1. Preheat your toaster oven to 425°F. Set it to convection if you have that option — it makes a real difference for skin crispiness.

  2. Place wings on a wire rack set over a foil-lined toaster oven pan. The rack is important; it lets air circulate underneath.

  3. Roast for 25 minutes, then flip each wing and roast another 10-12 minutes until the skin is crackly and deep golden brown. If your toaster oven runs cool, add a few extra minutes.

Make the Sauce and Finish

  1. While the wings are in their final few minutes of cooking, melt the butter in a small saucepan over low heat (or microwave it). Stir in the hot sauce, grated garlic, honey, and salt.

  2. Pull the wings out when they're done. Let them sit for 2 minutes — they'll stay crispy, and this small rest helps.

  3. Toss the wings in the garlic buffalo sauce right before serving. If you sauce them too early they'll soften, so don't do it.

  4. Scatter the parsley over the top and hit them with a squeeze of lemon. Serve immediately.

Notes

Baking powder is the trick — it raises the pH of the skin and breaks down proteins in a way that creates that crackly texture without frying. Don't substitute baking soda or skip it.

For even crispier results, don't skip the uncovered fridge rest if you've got time. Even 20 minutes makes a noticeable difference.

Want them less spicy? Cut the hot sauce back to 2 tablespoons and bump the honey up to 1.5 tablespoons. Want them spicier? Add a pinch of cayenne to the dry rub.

Leftovers reheat really well in the air fryer at 375°F for 5-6 minutes. They come back crispier than you'd expect.
