I started making these after I had something vaguely similar at a hole-in-the-wall spot near my office that closed down too soon. The original had some kind of thick yogurt on it, but I wanted a version that was fully dairy-free, and honestly the tahini drizzle is better anyway. It clings to the lamb in a way that cool yogurt just doesn’t.

The whole thing comes together in about half an hour, including the time it takes your toaster oven to preheat. You cook the lamb on the stovetop first — just five minutes — then the oven does the real work, crisping up the flatbread while the spiced meat gets a little caramelized on top. That’s the part I’m obsessed with: the slightly charred edges of the lamb where it meets the hot pan surface of the flatbread.

Ground lamb sounds fancy but it’s available at most grocery stores and usually cheaper than ground beef by the pound. The spice mix here is warm and aromatic — cumin, cinnamon, allspice — not spicy hot, though you can push the cayenne if you want more fire. The cucumber mint salad on top is non-negotiable. It cuts through the richness and makes the whole thing feel fresh instead of heavy. Keep a toaster oven baking sheet handy — you want a flat surface that fits inside without blocking airflow.

This works as a weeknight dinner, a casual thing to put out for friends, or honestly just lunch if you have leftover lamb kicking around. Scale up easily by doing flatbreads in batches. They take maybe 9 minutes each, so it’s not a big deal.

  1. Preheat your toaster oven to 425°F. If yours takes a few minutes to get there, let it fully preheat — it matters for a crispy base.

  2. In a skillet over medium-high heat, warm the olive oil. Add the diced onion and cook for about 2 minutes until it softens a little. Add the garlic and stir for 30 seconds.

  3. Add the ground lamb. Break it up well and cook until browned, about 5 minutes. Drain off any excess fat if there's a lot pooling in the pan.

  4. Stir in the tomato paste, cumin, smoked paprika, cinnamon, allspice, cayenne, salt, and pepper. Cook another minute or two so the spices bloom into the meat. Take it off the heat.

  5. Lay your flatbreads on a toaster oven baking sheet — you'll probably need to work in batches unless you have a bigger oven. Divide the lamb mixture evenly among them, spreading it out to the edges but leaving a small border.

  6. Bake at 425°F for 8 to 10 minutes until the edges of the flatbreads are crispy and the lamb is caramelized on top in spots. Watch the first batch closely; thin flatbreads can go from perfect to burnt fast.

  7. While the flatbreads bake, toss together the cucumber, mint, lemon juice, olive oil, salt, and sumac if you're using it. Set aside.

  8. Whisk the tahini with the warm water and lemon juice until smooth and pourable. Add a tiny pinch of salt.

  9. Pull the flatbreads out of the oven. Drizzle tahini over each one, then pile on the cucumber mint salad. Scatter pine nuts and parsley on top and serve immediately.

Notes

The lamb mixture can be made a day ahead and kept in the fridge — dinner gets even faster. Don't skip draining the fat or the flatbreads will go soggy. If you only have a regular toaster and want something similar, toast the flatbreads first until crispy, then top with pre-cooked spiced lamb and a cold salad. It's not the same but honestly still works as a quick lunch. Sumac is worth buying — a $4 jar lasts forever and makes everything taste more interesting.
