Crostini get a bad reputation for being fussy, but this version is actually pretty forgiving. Sweet potatoes roast fast in a toaster oven — faster than you’d think — and you only need one pan. The whole thing comes together in around 30 minutes, which puts it squarely in weeknight territory even if it looks like something you’d order at a wine bar.

The combination here is one I keep coming back to: earthy sweet potato, tangy whipped goat cheese, and brown butter with crispy sage. The honey at the end is non-negotiable in my opinion. It ties everything together without making it dessert-sweet. A little flaky salt on top and you’ve got something that tastes genuinely thought-out.

A toaster oven with a convection setting will give you crispier sweet potato edges since the air circulation pulls moisture away faster, but a standard bake setting works fine — just give the rounds an extra minute or two. Either way, you’ll want a good toaster oven baking pan that actually fits your machine; overcrowding is the main thing that gets between you and crispy edges.

This makes a solid appetizer for four people, or an embarrassingly satisfying lunch for two if you’re not sharing.

Instructions

Roast the Sweet Potato

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. Line the toaster oven pan with foil or parchment.

  2. Toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper directly on the pan. Spread them in a single layer — overlapping will steam them instead of crisping them up, and you want those edges to catch.

  3. Roast for 18 to 20 minutes, flipping once halfway through, until the rounds are tender inside and golden-brown with slightly crispy edges. Pull them out and set aside.

Toast the Baguette

  1. While the sweet potatoes finish up, brush both sides of your baguette slices lightly with olive oil. You can do this in batches if your toaster oven is small.

  2. Toast at 400°F for about 4 to 5 minutes, flipping once, until golden and crisp. They should feel firm when you tap them. Set aside on a rack — don't stack them or the bottoms go soft.

Make the Whipped Goat Cheese

  1. Add the goat cheese, cream cheese, olive oil, and lemon juice to a small bowl. Beat with a fork until smooth and spreadable — it takes about a minute of real effort. You can use a hand mixer if you want it fluffier, but honestly the fork version is fine and has a slightly more rustic texture I actually prefer.

Brown Butter and Fry the Sage

  1. Melt the butter in a small skillet over medium heat on the stovetop. Keep going past the foamy stage — you're waiting for it to smell nutty and turn a light amber color, about 3 minutes. Drop in the sage leaves and let them fry for 30 to 45 seconds until crisp. They'll keep cooking a little off heat, so don't walk away.

  2. Spoon the sage leaves out onto a paper towel. The brown butter left in the pan is going right on top at the end.

Assemble

  1. Spread a generous spoonful of whipped goat cheese onto each crostini. Top with one or two sweet potato rounds — they don't have to sit perfectly flat. Add a fried sage leaf, drizzle a tiny bit of honey and a little of that brown butter over everything, and finish with a pinch of flaky salt.

  2. Serve right away. These do not hold well once assembled, so put them together at the last minute.

Notes

Slice the sweet potato as evenly as possible — a mandoline makes it easy, but a sharp knife and some patience works too. Uneven slices mean some will be mushy before others are done. The whipped goat cheese can be made up to two days ahead and kept covered in the fridge; just let it come to room temperature before spreading. If your toaster oven runs hot (many do), check the sweet potatoes at the 15-minute mark. Leftover roasted sweet potato rounds are great on salads the next day.
