Cod is one of those fish that I think a lot of people overlook because they assume it needs a whole deep-fryer situation to be worth eating. It doesn’t. A hot air fryer or a cranked-up toaster oven does something really nice to a cod fillet — the outside gets firm and golden while the inside stays soft and flaky in that way that makes you eat faster than you planned. This recipe takes maybe 8 minutes of actual work.

The panko topping is where most of the flavor lives. Garlic, lemon zest, a little parsley, olive oil — pressed right onto the fish so it bakes into a proper crust instead of just sitting there. No egg wash, no flour dredge, no second pan. If you’ve got panko breadcrumbs in the pantry, you’re most of the way there already.

I’ve tested this in both appliances quite a bit, and both work. The air fryer is a little faster and the crust gets slightly crunchier — good if you’re cooking two portions and want dinner on the table fast. The toaster oven handles four fillets more comfortably, and using convection if your model has it closes most of the gap. A good toaster oven with convection genuinely makes a difference here. Either way, you’re looking at about 12 to 15 minutes of cook time.

Serve it with whatever you’ve got — rice, a simple green salad, roasted vegetables, or just some bread to catch the lemon juice. It’s a proper dinner with almost no effort, which is the whole point.

Prep the Fish and Topping

  1. Pat your cod fillets completely dry with paper towels. This step matters more than you'd think — any moisture on the surface just steams the fish instead of letting it get those golden edges.

  2. In a small bowl, stir together the panko, 2 tablespoons olive oil, minced garlic, parsley, lemon zest, and 1/4 teaspoon salt. It should look like damp sand and hold together a little when you press it. Set aside.

  3. Brush or rub the cod fillets all over with the remaining 2 tablespoons olive oil. Season both sides with the kosher salt, pepper, smoked paprika, and onion powder.

Air Fryer Method

  1. Preheat your air fryer to 400°F for 3 minutes. Lightly spray the basket with nonstick spray.

  2. Place the cod fillets in a single layer in the basket — don't stack or overlap them. Press a generous spoonful of the panko mixture firmly onto the top of each fillet.

  3. Air fry at 400°F for 10 to 12 minutes. Thinner fillets (under 3/4 inch) will be done at 10 minutes; a full inch-thick piece needs the full 12. The topping should be deep golden brown and the fish should flake easily when pressed gently with a fork. No need to flip.

  4. Squeeze lemon over everything immediately, hit it with a pinch of flaky salt if you have it, and serve right away.

Toaster Oven Method

  1. Preheat your toaster oven to 425°F on the bake setting. Line the toaster oven pan with foil and give it a light coat of nonstick spray.

  2. Arrange the seasoned cod fillets on the pan with an inch or two of space between them. Press the panko topping firmly onto each fillet so it sticks.

  3. Bake at 425°F for 13 to 15 minutes. If your toaster oven has a convection setting, use it — the crust gets noticeably crispier. The fish is done when the panko is golden and the flesh is opaque and flakes with a fork. If the topping starts browning too fast before the fish is cooked through, tent loosely with a small piece of foil for the last couple of minutes.

  4. Finish with a squeeze of fresh lemon and flaky salt, then serve immediately.

Notes

Frozen cod works fine — just thaw it overnight in the fridge and dry it really well before seasoning. If you skip the drying step, the crust tends to slide off and the fish gets a bit watery. I've also made this with haddock and tilapia using the exact same method and times, and it works great. The panko topping is forgiving — you can swap the parsley for dill or chives if that's what you have. Don't bother trying to flip the fillets mid-cook; the topping will fall apart and the crust forms perfectly on top without any help. Leftovers reheat reasonably well at 375°F for about 4 minutes in the air fryer, though honestly fresh is a different level.
