I started making these because I wanted something to serve alongside a pot of chili that wasn’t a full pan of cornbread. Six muffins is the right amount for a weeknight. They fit perfectly in a standard toaster oven, they’re done in under 20 minutes, and that little cube of cheddar in the middle — yeah, that was a happy accident the first time I made them.
The batter itself is pretty classic buttermilk cornbread, leaning savory rather than sweet. Just a tablespoon of sugar, enough to round out the cornmeal but not enough to make these taste like cake. The smoked paprika is subtle but does something good. And the jalapeños, seeded, keep the heat polite — though I’ll leave one set of seeds in if I know everyone at the table is okay with a little bite.
You don’t need any special equipment beyond a 6-cup muffin tin and a toaster oven muffin pan that actually fits your machine — worth checking before you start. A lot of standard tins are too wide for smaller toaster ovens, so if yours is compact, look for a narrow or half-size version. If you’ve been meaning to upgrade your setup, a countertop toaster oven with convection makes a real difference for baking things like this evenly.
They’re good straight out of the pan, genuinely great the next morning reheated. Serve them with soup, chili, eggs — or just eat one standing over the sink at midnight. I’ve done it. No regrets.
Toaster Oven Crispy Cheddar-Stuffed Jalapeño Cornbread Muffins

Preheat your toaster oven to 375°F. Grease a 6-cup muffin tin well with butter or cooking spray — this batter sticks if you're not generous.

Whisk together the cornmeal, flour, sugar, baking powder, baking soda, salt, and smoked paprika in a medium bowl.

In a separate smaller bowl, beat the egg lightly, then stir in the buttermilk and melted butter. Pour the wet ingredients into the dry and mix until just combined. Fold in the diced jalapeños. Don't overmix — lumpy is fine.

Spoon a heaping tablespoon of batter into each muffin cup. Press one cube of cheddar into the center of each, then cover with another spoonful of batter. The cup should be about 3/4 full.

Scatter the shredded cheddar over each muffin. Add a slice or two of pickled jalapeño on top if you're using them.

Bake at 375°F for 16 to 18 minutes, until the tops are golden and a toothpick inserted into the side (not center, or you'll hit the cheese) comes out clean. Let them cool in the pan for 5 minutes before popping them out — they firm up a lot as they cool and are nearly impossible to remove cleanly if you rush it.
Notes
The cheddar cube in the middle is the whole point here, so don't skip it or sub in shredded — it won't pool the same way. I like Cabot sharp cheddar for this specifically; it melts without going greasy. If your toaster oven runs hot (mine does), check at 15 minutes. Leftovers reheat great in the toaster oven at 325°F for about 5 minutes — they get crispy again on the outside. These freeze well too; just wrap individually and reheat from frozen at 350°F for 10 minutes.
