I started making these on a weeknight when I had half a bag of lentils and some mushrooms that needed to be used up. Didn’t expect much. But brown butter and mushrooms together are kind of ridiculous in the best way — that nutty, savory smell coming out of the toaster oven is genuinely hard to ignore.

Stuffed peppers usually feel like a project, but not these. The filling comes together in about 12 minutes on the stovetop while the peppers get a head start roasting. By the time the filling’s ready, the peppers are soft enough to hold everything without turning to mush by the time it’s done. The feta on top gets a little golden and slightly crispy at the edges — that’s the part I look forward to most.

A good toaster oven baking pan makes a real difference here. You want something with low sides so the heat can actually reach the peppers and caramelize them rather than just steam everything. I’ve been using the same lightweight aluminum one for years and it does the job perfectly. If you don’t have one that fits your machine, it’s worth grabbing one.

This recipe works in pretty much any toaster oven with a bake setting — countertop models, larger convection units, all of them. Just check the peppers a couple minutes early if your oven tends to run hot. The whole thing is vegetarian, filling enough for dinner, and genuinely good the next day cold out of the fridge (not that they’ll last that long).

  1. Preheat your toaster oven to 400°F. Set it to the bake or roast setting if you have the option.

  2. Rub the cut sides of each pepper half with olive oil and a pinch of salt. Arrange them cut-side up on your toaster oven baking pan. Slide them in and roast for 10 minutes while you make the filling. This gives them a head start so they don't come out underdone.

  3. While the peppers roast, heat a skillet over medium heat and add the butter. Let it go until it turns golden and smells nutty — about 3 to 4 minutes. Watch it. It can tip from brown to burnt quickly.

  4. Add the mushrooms to the brown butter. Don't stir right away. Let them sit for a minute so they actually brown instead of steam. Then stir occasionally and cook until most of the moisture has cooked off, about 6 minutes.

  5. Add the garlic, smoked paprika, cumin, and red pepper flakes. Stir and cook for another minute.

  6. Stir in the tomato paste, soy sauce, and lentils. Cook for 2 to 3 minutes until everything is combined and the filling looks jammy rather than wet. Taste and adjust salt. Stir in the parsley.

  7. Pull the peppers out of the toaster oven. Spoon the filling into each pepper half, packing it in. Top generously with crumbled feta and a small drizzle of olive oil.

  8. Return the pan to the toaster oven and roast for another 15 to 18 minutes, until the peppers are tender with slightly charred edges and the feta is golden in spots. Serve hot with extra parsley scattered on top.

Notes

If your toaster oven runs hot, check the peppers at the 12-minute mark on the second roast. Leftover filling (if you have it) is excellent on toast the next day. You can swap the feta for goat cheese if that's what you have. Lentils from a can save a lot of time and honestly taste just as good here. If you want more char on the feta, switch to the broil setting for the final 2 minutes.
