I started making these on a Tuesday when I had one sad sweet potato, half a can of black beans, and zero interest in standing at the stove. The toaster oven handled everything — roasting the sweet potato to that slightly caramelized, jammy state it gets when the heat’s high enough, and then crisping up the assembled quesadillas without any babysitting required. The whole thing comes together in about 35 minutes, start to finish, and most of that time you’re just waiting.
The brown butter idea came from brushing the outside of the tortillas before they go in. It sounds fancier than it is. You’re just melting butter and brushing it on — but it gives the outside of the quesadilla a flavor you don’t get from plain oil, sort of nutty and rich. Combined with the smoked paprika in the sweet potato seasoning, it’s a pretty satisfying combination for something this simple. If you’re using a toaster oven baking sheet with a rim, that’s ideal for the sweet potato step — keeps the cubes from sliding around when you flip them.
The smoked paprika crema is not optional in my opinion. It takes two minutes and it’s what ties everything together. Sour cream, lime, garlic, smoked paprika. That’s it. If your toaster oven is on the smaller side, just plan to toast the quesadillas in two batches rather than cramming them in. I use a reliable toaster oven with a convection setting, which cuts a few minutes off the sweet potato roast — but a standard bake setting works perfectly fine, just give the potatoes an extra minute or two.
These are vegetarian and genuinely filling. I’ve served them as a weeknight dinner and as a lazy weekend lunch. Both work. They don’t reheat particularly well once assembled, but the filling keeps beautifully, so you can have fresh quesadillas on day two without starting from scratch.

Roast the Sweet Potato

Preheat your toaster oven to 425°F on the convection roast setting if you have it, or regular bake if you don't. Either works.

Toss the sweet potato cubes with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper right on a small rimmed baking sheet. Spread them in a single layer — crowding them is the enemy of getting any color on them.

Roast for 18-20 minutes, flipping once around the 10-minute mark, until the edges are caramelized and the cubes are tender when you poke them with a fork. Set aside.
Make the Crema

While the sweet potatoes roast, stir together the sour cream, smoked paprika, lime juice, salt, and grated garlic in a small bowl. Taste it. Adjust the lime if it needs more brightness. Done.
Assemble and Toast the Quesadillas

Melt 1 tablespoon of the butter in a small bowl or just eyeball it. You'll brush it on the tortillas to get that golden, slightly crispy exterior.

Lay a tortilla flat and brush one side lightly with melted butter. Flip it butter-side-down. On one half of the tortilla, scatter a layer of shredded cheese, then some roasted sweet potato, a spoonful of black beans, a little red onion and jalapeño if using, and a pinch of cilantro. Fold the tortilla over.

Repeat with the remaining tortillas. You'll likely need to work in two batches depending on the size of your toaster oven — don't force two in there if they overlap.

Place the assembled quesadillas on your toaster oven rack or baking sheet. Bake at 400°F for 4-5 minutes per side, flipping carefully with tongs, until both sides are golden and the cheese inside has fully melted. The butter on the outside is what gets you that slightly crispy, almost pan-fried texture without a stovetop.

Cut each quesadilla into wedges and serve immediately with the smoked paprika crema alongside.
Notes
If your toaster oven runs hot (mine does — it's a Breville and the back corner scorches things), rotate the baking sheet halfway through the sweet potato roast. You can swap the sour cream in the crema for Greek yogurt if that's what you've got. The sweet potato filling keeps in the fridge for 3 days, so this is a good meal-prep situation — just assemble and toast fresh quesadillas to order. Pepper Jack instead of Monterey Jack makes these noticeably spicier, which I personally think is better.
