Air Fryer Toaster Oven Chicken Thighs (Juicy Inside, Crackling Skin Outside)

Bone-in chicken thighs come out with shatteringly crispy skin and juicy meat in under 30 minutes using your air fryer toaster oven's convection setting

Chicken thighs might be the best thing you can make in an air fryer toaster oven. I’ve cooked them every which way — oven, stovetop, grill — and honestly, the air fry method beats most of them for weeknight cooking. The circulating heat hits the skin hard and fast, and you get that crackling exterior that usually requires fussing over a cast iron pan. These come out genuinely crispy. Not just golden. Actually crispy.

The setup is minimal. Bone-in, skin-on thighs are the move — boneless and skinless work too, but you’d lose everything that makes this worth talking about. The spice rub comes together in about two minutes, and there’s one small trick (baking powder mixed into the rub) that makes a noticeable difference in how the skin behaves. I resisted this idea for a while, thought it sounded gimmicky, but it’s not. It works. If you’re not already using an instant-read meat thermometer, now’s a good time to start — it takes the guessing out of chicken completely.

One thing worth knowing about your appliance: air fryer toaster ovens vary more than dedicated air fryers. Some run a little hot, some have uneven airflow depending on where you place the rack. I use the middle-to-upper rack position and always preheat. If you’ve had mixed results with other recipes, try that before changing anything else. A good air fryer toaster oven with solid convection power makes this kind of recipe effortless.

This goes with pretty much anything — roasted vegetables, a simple salad, rice, whatever you’ve got. I made it last Tuesday with just a bag of prewashed arugula dressed with lemon juice and olive oil, and it felt like an actual dinner without much effort. That’s the kind of recipe I keep coming back to.

Chicken & Rub

Instructions

  1. Pat the chicken thighs completely dry with paper towels. This is the most important step. Wet skin steams instead of crisping, so really take a minute here and press them dry on all sides.

  2. Mix the salt, smoked paprika, garlic powder, onion powder, black pepper, cayenne (if using), and baking powder together in a small bowl. Rub the oil over the chicken, then coat all sides with the spice mix — get under the skin a little if you can.

  3. Set your air fryer toaster oven to the air fry setting at 400°F (205°C). Let it preheat for 3 to 5 minutes. Preheating actually matters here — it gives the skin an immediate blast of heat that starts the crisping right away.

  4. Place the chicken thighs skin-side down on the air fryer basket or rack. Cook at 400°F for 13 minutes.

  5. Flip the thighs skin-side up. Continue air frying at 400°F for another 12 to 13 minutes, until the skin is deep golden brown and crackling-crispy. Internal temperature should hit 165°F at the thickest part — check with an instant-read thermometer away from the bone.

  6. Let the thighs rest on a cutting board for 5 minutes before serving. Don't skip this. Scatter parsley over the top and serve with lemon wedges if you like. That's it.

Notes

Baking powder is the real trick — it raises the pH of the skin slightly and pulls out moisture, which means dramatically better browning. Don't substitute it with baking soda (completely different thing, different amounts). If your thighs are on the smaller side, start checking at the 10-minute mark after flipping. Larger thighs closer to 10 oz each may need an extra 2-3 minutes. If your toaster oven smokes a bit, there's likely fat dripping — a splash of water in the drip tray underneath can help. Leftovers reheat beautifully in the air fryer at 375°F for about 5 minutes.
