This one started because I had two zucchini going soft in the fridge and about 40 minutes before I needed to eat. Orzo bakes are one of those things that feel fancier than they are — you’re basically just letting the pasta absorb flavorful liquid in the oven, which it does very happily without you babysitting it.

The move here is roasting the zucchini first. Just 12 minutes with garlic butter gets the edges caramelized and keeps the pieces from turning to mush when they go back in for the bake. Mushy zucchini in pasta is a texture I find deeply unpleasant, so this step matters. A good toaster oven baking pan with a rim helps here — you want something that can handle the roasting and then the liquid without warping or spilling.

Feta is doing a lot of work in this dish. Half goes in during the bake where it melts into the orzo and makes everything creamy. The rest goes on top at the end and gets slightly golden and crispy at the edges — that contrast is kind of the whole point. Use block feta and crumble it yourself. Pre-crumbled feta is drier and doesn’t melt the same way. If you’ve got a toaster oven with convection, use it for the last few minutes uncovered to get a little more browning on that top layer.

This is a complete vegetarian dinner as-is. The lemon at the end isn’t optional, in my opinion — without it the whole thing tastes a bit flat. Fresh mint sounds weird but trust me, it works.

Roast the Zucchini

  1. Preheat your toaster oven to 425°F on the bake setting. If yours runs cool (a lot of them do), give it a solid 10 minutes to come up to temperature.

  2. Toss the zucchini half-moons with the melted butter, minced garlic, salt, pepper, and red pepper flakes right on your toaster oven baking pan. Spread them out in a single layer — don't crowd them or they'll steam instead of brown.

  3. Roast for 12 minutes, flipping once halfway through, until the edges are golden and the cut sides have some color. Pull them out and set aside. Leave the oven on.

Assemble and Bake the Orzo

  1. In the same baking pan (or a small toaster oven-safe baking dish, roughly 8x8 inches), combine the dry orzo, vegetable broth, water, olive oil, dried oregano, and the half teaspoon of salt. Stir to combine.

  2. Scatter in the cherry tomatoes and about two-thirds of the crumbled feta. Give it a quick stir. Then nestle the roasted zucchini pieces on top.

  3. Cover tightly with aluminum foil and bake at 425°F for 18 minutes. The orzo should be mostly absorbed but not completely dry — it'll finish absorbing as it sits.

  4. Remove the foil, scatter the remaining feta over the top, and bake uncovered for another 4 minutes. You want those last bits of feta to get a little golden at the edges. It's worth the wait.

Finish and Serve

  1. Pull it out and immediately hit it with the lemon juice and lemon zest. The acid really wakes everything up. Scatter the parsley and mint over the top, add a drizzle of olive oil, and serve straight from the pan.

Notes

Toaster oven sizes vary a lot — if yours is on the smaller side, an 8x8 baking dish works better than the pan that came with the machine. The orzo bake will look a little soupy when the foil comes off. Don't panic. Let it sit for 3-4 minutes after it comes out and it thickens right up. If you want a bit more heft, a drained can of chickpeas stirred in with the orzo is a genuinely good addition. And if you're not into mint, just skip it — parsley alone is fine.
