I started making these on a weeknight when I had four big portobello caps, half a jar of roasted red peppers, and a block of feta that needed to be used. What came out of that toaster oven was genuinely better than I expected — the kind of thing where you eat standing at the counter before dinner is technically served. The harissa does a lot of the heavy lifting here. It’s sharp and warm without being one-note, and it pulls the sweetness of the red peppers into something more interesting. Feta handles the salt, the breadcrumbs handle the crunch, and the whole thing comes together without a single pan on the stove.

You don’t need much equipment. A toaster oven baking sheet lined with foil is all that goes in the machine. If your toaster oven tray is on the smaller side, you can bake two mushrooms at a time — they shouldn’t be crowded or they’ll steam instead of roast. The pre-roasting step (8 minutes before filling) is the one thing I’d really urge you not to skip. Mushrooms are mostly water, and if you skip it, you’ll end up with a soggy, sad situation.

This works beautifully as a vegetarian main, but it also holds its own next to a simple green salad as a starter. Honestly I’ve eaten two of these for dinner with nothing else and felt completely fine about it. If you want something a bit more substantial underneath, a scoop of couscous or some crusty bread on the side covers it. A reliable toaster oven with a broil function gives you the option to blast the breadcrumbs at the end — that last minute under the broiler is optional but really does make them look like they came from an actual restaurant.

  1. Preheat your toaster oven to 400°F on the bake setting. Line the toaster oven tray with foil or parchment — mushrooms release a lot of liquid and you'll thank yourself later.

  2. Brush both sides of each portobello cap with olive oil. Arrange them gill-side up on the tray. Slide them in for 8 minutes. This pre-roast step draws out moisture so the filling doesn't turn into soup.

  3. While the mushrooms are roasting, mix together the harissa, roasted red peppers, feta, minced garlic, oregano, and black pepper in a bowl. Stir until combined — it'll look a little rough and chunky, which is exactly right.

  4. In a separate small bowl, toss the panko with olive oil, lemon zest, parsley, garlic powder, and salt until every crumb is coated. Set aside.

  5. Pull the mushrooms out. They'll have released some liquid in the tray; just tip it off or blot with a paper towel. Divide the filling evenly among the four caps, pressing it in gently. Pile the breadcrumbs on top of each one — don't be shy.

  6. Return the tray to the toaster oven and bake for another 12 to 14 minutes, until the breadcrumbs are deep golden and the filling is bubbling around the edges. If your toaster oven has a broil setting, 60 seconds under the broiler at the very end does great things for the crumb topping.

  7. Let them rest for a couple minutes before serving — the filling is volcanic straight out. Scatter fresh parsley over the top and serve with a squeeze of lemon if you have one handy.

Notes

Scooping out the mushroom gills is worth the extra 30 seconds — they hold water and can make the filling muddy. Harissa brands vary a lot in heat level; Mina is mild and approachable, while Trader Joe's version has more kick. If you're using homemade or very spicy harissa, start with 1 tablespoon. Leftover filling (if you somehow have extra) is excellent spread on toast. These reheat well in the toaster oven at 375°F for about 6 minutes — the breadcrumbs come back crispy, which is more than you can say for microwave reheating.
