The air fry setting on a combo toaster oven moves hot air around fast enough to actually sear the surface a little — it’s not quite the same as a screaming-hot cast iron, but it gets you a lightly golden top and a center that stays moist, which is more than most oven-baked salmon can claim.

The marinade here is dead simple: soy sauce, honey, Dijon, lemon, smoked paprika. You’ve probably got all of it right now. It’s savory, just barely sweet, and the smoked paprika gives it a little depth without making it taste like anything specific — people always ask what’s in it. Serve it over rice, next to roasted vegetables, or honestly just with a big handful of greens dressed in lemon. It pulls together a real dinner in under 20 minutes start to finish.

If you’ve been getting inconsistent results from your machine, it might be worth picking up an instant-read thermometer — salmon is one of those proteins where 10 degrees makes the difference between silky and chalky. Also, if your air fryer basket is older and starting to stick, a pack of perforated parchment liners makes cleanup significantly less annoying.

  1. Pat the salmon fillets completely dry with paper towels — this is non-negotiable if you want any kind of color on the outside. Wet fish just steams.

  2. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, oregano, salt, pepper, soy sauce, honey, lemon juice, and Dijon mustard. It'll look like a slightly runny paste. Good.

  3. Spoon or brush the marinade all over the salmon, coating the top and sides generously. You don't need to let it sit, honestly — five minutes is fine, but if you want to prep it ahead, it holds well in the fridge for up to an hour.

  4. Preheat your air fryer toaster oven to 400°F on the air fry setting for about 3 minutes.

  5. Place the fillets on the air fryer basket or tray, skin-side down if yours has skin. Don't crowd them — a little space means better airflow and better browning. If your machine runs small, do one at a time.

  6. Air fry at 400°F for 10 to 12 minutes. Start checking at 10 minutes. The salmon's done when it flakes easily with a fork and the thickest part reads 125–130°F on an instant-read thermometer for medium, or 145°F if you prefer it fully cooked through. I usually pull mine at 128°F — still a little glossy in the center, which I think is the sweet spot.

  7. Let it rest on the tray for a minute or two before serving. Squeeze fresh lemon over the top and eat immediately.

Notes

Thickness matters a lot here — if your fillets are thinner than 3/4 inch, check at 8 minutes. Frozen salmon works too: thaw it fully first and dry it extra well before adding the marinade. If you don't have smoked paprika, regular paprika is fine but it won't have that faint smoky thing going on, which I do think makes a difference. Leftovers keep in the fridge for up to 2 days and are genuinely great cold over a salad or in a rice bowl.
