I’ve made wings in a regular oven, in a deep fryer, and on the grill, and honestly? The air fryer toaster oven version has become my go-to. It’s not even close. The convection fan blasts hot air all around the wings and you get this blistered, crackly skin that you’d swear came out of a deep fryer — except your kitchen doesn’t smell like a fast food restaurant afterward. I make these on game days, on random Tuesdays, pretty much whenever the craving hits.

The trick that makes everything click is baking powder in the dry rub. I know it sounds odd, but it raises the pH of the skin slightly and helps it brown and crisp in a way that plain salt and spices alone just don’t. It’s a technique that’s been floating around for years and I was skeptical the first time I tried it. Now I’d never skip it. You’ll also want to make sure your wings are genuinely dry before they go in — paper towels, press firmly, don’t be gentle about it.

For the appliance side of things, a quality air fryer toaster oven combo makes all the difference here. You want one with a real air fry setting and a basket or perforated tray so air circulates underneath the wings, not just over the top. If you’re working with a flat solid pan, the bottoms won’t crisp the same way. Most of these machines also come with a rack, and that works fine too — just position it in the upper-middle slot.

The buffalo sauce here is classic and simple: Frank’s, butter, a tiny bit of honey. That’s it. I’ve done fancier versions with garlic butter or lemon pepper seasoning, and they’re great, but when I want hot wings, I want them tasting like hot wings. Feel free to go hotter or milder depending on your crowd. A good air fryer basket tray for your toaster oven also helps if the one that came with yours has too-large holes and smaller pieces fall through.

Prep the Wings

  1. Pat the wings completely dry with paper towels. Really dry. Any moisture left on them is the enemy of crispy skin, so don't rush this part.

  2. In a large bowl, toss the wings with the baking powder, salt, garlic powder, smoked paprika, and black pepper until every piece is evenly coated. The baking powder sounds weird but trust it — it draws out moisture and gives you that crackly skin you're after.

  3. If you have time, let the coated wings sit uncovered on a rack in the fridge for 30 minutes to an hour. Totally optional, but it makes a real difference. If it's a weeknight and you just need dinner, skip it.

Air Fry the Wings

  1. Preheat your air fryer toaster oven to 400°F on the air fry setting. Give it a full 5 minutes to heat up.

  2. Arrange the wings in a single layer on the air fryer basket or tray — don't stack them. Depending on your machine's size, you may need to do two batches. Crowded wings steam instead of crisp, and that's a sad wing.

  3. Air fry at 400°F for 12 minutes, then flip each wing. Continue cooking for another 10 to 13 minutes, until the skin is deep golden, blistered in spots, and genuinely crispy when you tap it.

Sauce and Serve

  1. While the wings finish cooking, whisk together the hot sauce, melted butter, honey, and garlic powder in a large bowl. Taste it. Adjust heat or butter to your preference.

  2. Pull the wings out and immediately toss them in the buffalo sauce. Every piece should be coated and glossy.

  3. Pile them on a plate with celery sticks and a big bowl of dressing alongside. Eat immediately — wings wait for no one.

Notes

Baking powder is non-negotiable for crispy skin. Make sure it's labeled aluminum-free or the wings can taste slightly metallic. Don't skip patting them dry. If your toaster oven runs hot, check them a couple minutes early on the second side. Leftovers reheat beautifully in the air fryer at 375°F for about 5 minutes — they crisp right back up. Sauce them after reheating, not before, or the skin gets soggy.
