Some nights you want something that feels like an actual meal — not just toast with stuff on it — but you also don’t want to stand over a stove babbling at a hot pan. That’s exactly where this bowl comes in. Sweet potato goes into the toaster oven first, gets a ten-minute head start, then halloumi and cherry tomatoes join the party. Everything comes out caramelized and a little sticky from the honey garlic glaze, and the lemon tahini you whisk together in the meantime is genuinely good enough to put on almost anything.

Halloumi is a bit of an underrated hero here. It’s a semi-firm Cypriot cheese with a high melting point, which means it gets golden and crispy in the oven without collapsing into a puddle — and it pairs weirdly well with sweet potato. The slight saltiness cuts through the honey. I’ve made this probably a dozen times at this point and I still look forward to it.

You’ll need a good rimmed tray that fits your machine — a toaster oven baking sheet with low sides works best here because it lets the heat circulate properly and actually browns things instead of steaming them. If you’re in the market for a new machine or just thinking about one, a toaster oven with convection will get the halloumi crispier faster, though it’s not required.

Couscous is the quickest base I know — boiling water, five minutes, fluff. It’s one of those things that always feels slightly too easy for how good it ends up being. The whole bowl comes together in under 35 minutes, uses one tray, and the only real cleaning afterward is that bowl you made the tahini in.

Roast the Sweet Potato and Halloumi

  1. Preheat your toaster oven to 425°F on the roast or bake setting. Line the toaster oven tray with foil — halloumi will stick to bare metal and you'll be scraping forever.

  2. In a large bowl, whisk together the olive oil, honey, minced garlic, smoked paprika, cumin, salt, and pepper. Add the sweet potato cubes and toss well to coat. Spread them in a single layer on the prepared tray and roast for 10 minutes.

  3. While the sweet potatoes get a head start, toss the halloumi cubes and cherry tomatoes in whatever coating is left in that bowl. After the 10 minutes are up, push the sweet potatoes to one side and add the halloumi and tomatoes to the tray.

  4. Roast everything together for another 10-12 minutes, until the sweet potato is tender with caramelized edges and the halloumi is golden brown on at least two sides. It's fine if a few tomatoes burst — that's the best part.

Make the Couscous

  1. While everything roasts, combine the couscous, olive oil, and salt in a heat-safe bowl. Pour the boiling water (or broth) over it, stir once, and cover tightly with a plate or plastic wrap. Leave it alone for 5 minutes, then fluff with a fork. Done.

Make the Lemon Tahini

  1. Whisk together the tahini, lemon juice, olive oil, grated garlic, salt, and cayenne if you're using it. Add water one tablespoon at a time until it's thin enough to drizzle easily. Taste it — if it needs more lemon or salt, add more. Tahini varies a lot by brand, so trust yourself here.

Assemble and Serve

  1. Divide the couscous between two bowls. Pile the roasted sweet potato, halloumi, and tomatoes on top. Drizzle generously with lemon tahini — don't be shy. Finish with chopped parsley, sesame seeds, and a lemon wedge on the side.

Notes

Dry the halloumi really well before roasting. Any moisture left on it will steam instead of sear and you'll miss out on that golden crust. If your toaster oven runs cool, give the sweet potatoes an extra 3-4 minutes before adding the halloumi. Leftovers keep in the fridge for 2 days — store everything separately if possible, since couscous absorbs the tahini fast. The lemon tahini will thicken up in the fridge; just add a splash of water and re-whisk. For a bit more heat, a pinch of Aleppo pepper on top before serving is really nice.
