Chicken thighs are genuinely hard to mess up, which is part of why I keep coming back to them. But getting that skin truly crispy — not pale, not chewy, actually crunchy — that used to require a screaming-hot cast iron or an oven cranked to broil. Your air fryer toaster oven combo changes that completely. The convection fan blasts hot air around the chicken from every direction, and because the oven cavity is small, it gets up to temperature fast and stays there. The result is skin that actually shatters when you bite into it, and meat underneath that’s stayed completely moist. I’ve made these probably forty times at this point, which tells you everything.
The spice rub is straightforward. Smoked paprika does a lot of heavy lifting here — it gives the skin this gorgeous deep rust color and a subtle smokiness without actually needing a grill. I usually keep cayenne optional because I’ve made these for people who genuinely cannot handle heat, but personally I always add it. The whole thing takes maybe 8 minutes to prep, and then the oven does the rest.
One thing I want to be upfront about: oven size and wattage varies between machines, so your first batch might need a minute or two of adjustment. That’s normal. Use an instant-read meat thermometer the first time you make these — 165°F at the thickest part, not touching bone, and you’re safe every time. After that first batch you’ll know exactly how your machine runs.
These are the kind of weeknight dinner that feel like more effort than they were. Serve them with whatever’s easy — a simple salad, some roasted vegetables from the same oven right after, rice from the stovetop. Honestly though, they’re good enough to eat straight off the tray.
Air Fryer Toaster Oven Chicken Thighs (Crispy Skin, Juicy Inside)
Bone-in, skin-on chicken thighs cooked in your air fryer toaster oven until the skin is shatteringly crisp and the meat stays completely juicy. A simple spice rub, 25 minutes, done.
Ingredients
Instructions
-
Pat the chicken thighs completely dry with paper towels — and don't rush this step. Dry skin is the whole reason you'll get that crispy crackle instead of rubbery chewiness.
-
Mix the smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and cayenne (if using) together in a small bowl.
-
Rub the olive oil all over the chicken thighs, including under the skin if you can loosen it a bit without tearing it. Then press the spice rub on all sides. Really get it on there.
-
Preheat your air fryer toaster oven to 400°F on the air fry setting for 3-5 minutes. This matters — starting on a hot tray helps the skin begin crisping immediately.
-
Place the chicken thighs skin-side up on the air fryer basket or tray, leaving at least an inch of space between each one. Don't overlap them.
-
Air fry at 400°F for 22-26 minutes. No need to flip. The skin faces up the entire time so the hot circulating air can do its thing. Start checking at 22 minutes — you're looking for deeply golden, crispy skin and an internal temperature of 165°F at the thickest part (not touching bone).
-
Let the thighs rest on the tray or a cutting board for 5 minutes before serving. That rest makes a real difference in juiciness.
Notes
Bone-in, skin-on is non-negotiable here if you want crispy skin — boneless thighs work but they'll cook faster (check at 16-18 minutes) and won't get the same crackle. If your thighs are on the larger side (over 8 oz each), add 3-4 minutes and check the temp. Don't crowd the tray or the skin steams instead of crisps. Leftovers reheat really well at 375°F for about 6-7 minutes.
