I made this for the first time on a Tuesday when I had half a block of halloumi in the fridge that needed to be used up and not much else going on. Twenty-five minutes later I was eating something that tasted like it came from an actual restaurant. That’s the thing about halloumi — it does a lot of the work for you. It gets this incredible salty, golden crust when it roasts, and it holds its shape instead of melting everywhere, which makes it perfect for flatbread.

The combination here is pretty straightforward: briny olive tapenade as a base (so you don’t even have to make a sauce), jammy roasted cherry tomatoes that collapse into little bursts of sweetness, and then the halloumi on top getting crispy under the toaster oven’s heat. Fresh basil and a squeeze of lemon at the end cut through all that richness. It works. I’ve made it probably six times since that first Tuesday.

You’ll need a small rimmed toaster oven baking sheet for roasting the tomatoes — a flat pan will let the juices run everywhere and make a mess. If you don’t have one, a small oven-safe skillet works fine. And honestly, if you’ve been on the fence about getting a countertop toaster oven with a convection setting, recipes like this are exactly why it’s worth it. The convection fan is what gets that halloumi properly golden instead of just warm and pale.

Store-bought flatbreads or naan both work here. I’ve used both and honestly can’t pick a favorite — the naan gets slightly puffier, the flatbread gets crispier on the bottom. Use what you have.

  1. Preheat your toaster oven to 425°F. If it has a convection setting, use it — you'll get better color on the halloumi.

  2. Toss the cherry tomatoes with 1 tablespoon of olive oil, the oregano, and the black pepper directly on your toaster oven baking pan or a small rimmed sheet. Slide them in and roast for 10 minutes, until they're starting to slump and their edges are going a little dark. Pull them out and set aside — don't wipe the pan.

  3. While the tomatoes roast, pat the halloumi slices dry with a paper towel. This matters. Wet halloumi steams instead of crisping, and nobody wants that.

  4. Lay your flatbreads on a cutting board or clean surface. Spread about 1½ tablespoons of tapenade over each one, leaving a small border around the edge.

  5. Arrange the roasted tomatoes over the tapenade, then lay the halloumi slices on top, slightly overlapping is fine. Brush or drizzle the remaining tablespoon of olive oil over the halloumi.

  6. Place both flatbreads directly on the toaster oven rack, or on the baking pan if your toaster oven is on the smaller side. Bake at 425°F for 7 to 9 minutes, until the halloumi is golden on top with some brownish spots and the flatbread edges are crisp.

  7. Pull them out and immediately squeeze the lemon juice over both flatbreads, scatter the torn basil on top, and hit each one with a pinch of flaky salt. Serve right away — halloumi firms up as it cools and it's best hot.

Notes

Halloumi brands vary a lot in saltiness. Taste a small piece before you add any extra salt. Some brands (I've found the Cypriot ones especially) are salty enough that you can skip the finishing salt entirely. The tapenade carries a lot of flavor on its own, so don't pile it on too thick or it'll overpower everything. Leftovers reheat okay in the toaster oven at 375°F for 4–5 minutes, though the halloumi will be a bit chewier the next day. Still totally edible.
