I made this for the first time on a Tuesday night when I had half a block of feta in the fridge that needed to be used up, and now it’s probably in my weekly rotation more than anything else I cook. That’s kind of the thing with flatbreads in the toaster oven — they’re fast, the cleanup is minimal, and the results are way better than you’d expect from something that takes less than 30 minutes.
The combination here sounds simple because it is. Red onion gets a head start in the oven with a little honey and olive oil, so by the time it hits the flatbread it’s soft and starting to jammy up around the edges. The feta doesn’t fully melt — it just gets a little golden in spots and turns slightly creamy underneath. Walnuts add crunch. The final drizzle of honey over the top when everything comes out of the oven is not optional. Trust me on that one.
You’ll want a toaster oven baking sheet that fits your machine properly — it makes a real difference for getting the flatbread base crispy instead of just hot. If you’re in the market for a new machine, I’ve been using a toaster oven with convection and it cuts the cook time by a couple of minutes and gets the edges crispier.
This works as an appetizer, a light dinner with a salad, or honestly just a snack you eat standing at the kitchen counter because you couldn’t wait. I’ve done all three.
Toaster Oven Crispy Feta and Roasted Red Onion Flatbread with Honey, Walnuts, and Fresh Thyme
Salty feta, sweet caramelized red onion, and crunchy walnuts on a crispy flatbread base — all done in the toaster oven in under 30 minutes. Finish it with a drizzle of honey and fresh thyme and it's genuinely hard to stop eating.

Preheat your toaster oven to 400°F on the bake setting. If yours runs hot (a lot of them do), go with 390°F.

Toss the sliced red onion with 1 tablespoon of the olive oil, a pinch of black pepper, and the 1 tablespoon of honey directly on your toaster oven baking tray. Spread them out in a single layer and roast for 8 minutes, until they're starting to soften and go a little golden at the edges. They don't need to be fully caramelized — they'll keep cooking on the flatbread.

While the onion is roasting, brush each flatbread with the remaining tablespoon of olive oil. Get all the way to the edges.

Pull the tray out. Push the onions to the side momentarily and slide one flatbread onto the tray (or use a second tray if you've got one that fits). Distribute the onions evenly over the flatbread, then scatter the crumbled feta and chopped walnuts over the top. Sprinkle the dried thyme and red pepper flakes over everything.

Bake for 9 to 10 minutes, until the flatbread edges are crispy and starting to brown and the feta has some golden spots on top. Watch it around the 8-minute mark — toaster ovens vary a lot and the walnuts can catch fast.

Slide onto a cutting board. Drizzle generously with honey, scatter fresh thyme leaves over the top if you have them, and finish with a pinch of flaky sea salt. Cut into pieces and eat immediately. Do the second flatbread the same way — or do both simultaneously if your toaster oven is large enough.
Notes
Flatbread brand matters more than you'd think. Ones that are a little thicker (like a good naan) hold up better and get chewy in the middle with crispy edges, which is exactly what you want. Thin lavash-style flatbreads work too but they go fully crispy, more like a cracker — also delicious, just different.
If you want to make this a full meal, add a small handful of arugula on top right after it comes out of the oven. The heat wilts it slightly and it cuts through the richness of the feta nicely.
Leftovers (if there are any) reheat at 375°F for about 4-5 minutes. They won't be quite as good as fresh but they're still very solid.
