I made this the first time because I had half a cauliflower and nothing else interesting in the fridge. The smashing step felt a little silly until I saw what happened — the flat, rough surface goes golden and almost lacy at the edges, in a way that whole roasted florets never quite manage. It’s now one of my most-made weeknight things.

The setup is simple. You roast the steaks once, smash them flat, hit them with parmesan, and roast again. That second roast is where everything happens. The cheese fuses into the cauliflower and crisps up, the edges frizzle, and the whole thing looks way more restaurant-ish than the effort warrants. If you’ve got a toaster oven with a convection setting, use it here — the moving air is what really drives the browning.

The brown butter and herb oil might seem like two sauces at once, which is one more than most recipes need. But they do different things. The brown butter is warm and savory and coats the cauliflower. The herb oil is bright and fresh and cuts through the richness. Together they make the dish feel complete. Skip one if you’re in a rush — I’d keep the brown butter if I had to choose.

A small toaster oven baking sheet is helpful here so the steaks sit snugly and the oven heat concentrates around them. A regular sheet pan will work but tends to leave more dead space, which can slow the browning.

Instructions

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. Line a small toaster oven sheet pan with foil and brush it lightly with olive oil.

  2. Cut two or three thick steaks from the center of the cauliflower head — you want the core intact so they hold together. Save the florets that fall off for another use (roast them another night, honestly).

  3. Brush both sides of each steak with olive oil and season with the salt, pepper, and garlic powder. Lay them flat on the prepared pan.

  4. Roast for 12 minutes. Pull the pan out, then use a flat spatula to press down firmly on each steak — you're smashing them slightly so more surface area hits the pan. They'll spread and get a little ragged. That's exactly what you want.

  5. Brush the tops with any remaining olive oil, then scatter the grated parmesan over each steak. Return to the toaster oven and roast another 8 to 10 minutes, until the edges are deeply golden and the parmesan is crisp and brown in spots.

  6. While the cauliflower finishes, make the brown butter. In a small skillet over medium heat, melt the butter. Add the sliced garlic and cook, stirring occasionally, until the butter smells nutty and turns golden brown — about 3 minutes. Watch it. Pull it off the heat and add the lemon juice carefully (it'll sputter a little).

  7. Stir together the olive oil, parsley, lemon zest, and red pepper flakes in a small bowl to make the herb oil.

  8. Transfer the cauliflower steaks to plates, spoon the warm brown butter and garlic slices over the top, then drizzle the herb oil around. Serve immediately.

Notes

You'll get the best two steaks from the very center of the cauliflower — the outermost slices tend to fall apart since they don't have enough core holding them. One large head usually gives you two solid steaks and a bunch of loose florets. Convection mode makes a real difference here if your toaster oven has it; the edges get crispier and more cracker-like. If you only have a basic toaster oven without convection, just add an extra 3-4 minutes. Parmesan from a block grated on the fine holes melts and crisps much better than the stuff in the green can — worth the extra minute. Leftovers reheat surprisingly well at 400°F for about 5 minutes; they won't be quite as crispy but still really good.
