I’ll be honest — I boiled hot dogs for years and thought that was just how it was done. Then one day my pot was already dirty and I just threw them in the air fryer on a whim, and I haven’t gone back since. The skin actually blisters and snaps. The inside steams from the inside out. It takes maybe eight minutes total and you don’t have to stand over anything.
For this you really don’t need much. Four franks, four buns, a sharp knife for scoring. If you’re cooking in a toaster oven, a good toaster oven broiler pan makes cleanup so much easier since the fat drips away from the franks instead of pooling under them. And if you don’t own an air fryer yet, a solid countertop air fryer toaster oven combo handles both methods perfectly and takes up less counter space than running two separate appliances.
The scoring step is the one thing people skip, and it’s the one thing that makes the biggest difference. Three or four diagonal cuts, halfway through — the frank opens up under the heat, the edges char slightly, and the whole thing looks like it came off an actual grill. It takes about fifteen extra seconds. Worth it.
Use kosher-certified all-beef franks here. Hebrew National is easy to find and tastes good. Best’s Kosher is excellent if you can get it. Load them up however you like — I’m a yellow mustard and sauerkraut person, but this recipe works as a base for anything from a classic New York street cart style to a full Chicago dog situation.
Air Fryer or Toaster Oven Hot Dogs (Crispy Skin, Juicy Inside)

Score the franks

Take a sharp knife and score each frank 3 or 4 times on a diagonal, cutting about halfway through. Don't skip this. It lets the heat get into the meat, speeds up cooking, and gives you those gorgeous charred edges that make a hot dog actually worth eating. Some people skip the scoring and then wonder why their frank is still cold in the middle — that's why.
Air Fryer Method

Preheat your air fryer to 390°F (200°C) for about 3 minutes.

Place the scored franks in the basket in a single layer. No need to oil them unless your air fryer is older and tends to stick.

Cook for 5 to 6 minutes, flipping once halfway through, until the skin is blistered and the score marks have opened up into nice charred ridges. That's what you want.

In the last 90 seconds of cooking, open the basket and nestle the buns in around the franks, cut-side facing the heating element. They'll toast up just enough — soft inside, slightly crisp on the cut face. Pull everything out and load them up.
Toaster Oven Method

Set your toaster oven to broil on high, or to 425°F if it doesn't have a broil setting. Line the toaster oven pan with foil for easy cleanup.

Place the scored franks on the pan and slide it in. Broil for 4 to 5 minutes, turning the franks once with tongs, until the skin is blistered and the cuts have crisped up at the edges.

For the buns, pull the frank pan out, add the buns cut-side up right on the foil, and broil for just 60 to 90 seconds more — watch them, they go from perfect to burnt fast under the broiler.

Pull everything out and serve immediately.
Notes
Kosher certification: if keeping strictly kosher, look for a kosher-certified symbol (like the OU or OK) on your frank packaging — Hebrew National and Best's Kosher are the easiest to find at most grocery stores. Potato buns are genuinely better here, just my opinion. If you want a Chicago-style dog, skip the ketchup entirely (seriously, skip it) and go with yellow mustard, relish, diced white onion, tomato slices, a dill pickle spear, sport peppers, and a pinch of celery salt. For a New York-style, just mustard and sauerkraut. Works with turkey franks too — just check the package, they can cook a little faster.
