I made these for a Friday night thing where I needed something that looked like I’d tried but I really hadn’t. Fifteen minutes of actual work, and people kept asking for the recipe. That’s kind of the whole pitch.

The grapes are the part that surprises everyone. Raw grapes on bread sounds odd, but roasting them in a hot toaster oven concentrates all that sugar and turns them almost jammy — there’s a little pool of sticky, slightly winey juice under each one. Paired with lemony ricotta and a hit of honey and black pepper, it hits sweet, savory, creamy, and crunchy all at once. You need a reliable toaster oven that can actually hit and hold 400°F for this — something like a toaster oven with convection will get you better browning on both the grapes and the bread, but a basic model works fine too.

The whole thing comes together on a single small pan — or two pieces of foil if you’re working in a compact unit. I usually do the grapes first and toast the bread while I’m assembling everything else. If you have a toaster oven baking pan with a rim, use it for the grapes so none of that good juice runs off the edge.

One thing: don’t skip the black pepper. I know half a teaspoon sounds like a lot on something this small, but it’s what keeps the whole thing from being cloying. The grapes and honey are sweet, the ricotta is mild, and the pepper cuts through it in a way that makes you want another one immediately.

Roast the grapes

  1. Preheat your toaster oven to 400°F on the bake setting. Line a small toaster oven baking pan with foil — the grapes get sticky and you'll thank yourself later.

  2. Toss the halved grapes with 1 tablespoon olive oil, the balsamic vinegar, and 1/4 teaspoon salt right on the pan. Spread them out in a single layer, cut side up.

  3. Roast for 15 to 18 minutes, until the grapes are shriveled, jammy, and starting to caramelize at the edges. They'll smell a little like mulled wine. Pull them out and set aside.

Toast the bread

  1. While the grapes roast, brush both sides of each baguette slice lightly with olive oil. Don't soak them — just a thin coat.

  2. Arrange the slices on a second piece of foil or directly on the toaster oven rack. Toast at 400°F for 5 to 7 minutes, flipping once halfway through, until both sides are genuinely golden and crisp. They should feel sturdy, not soft.

Assemble

  1. Mix the ricotta with the lemon zest and 1/2 teaspoon salt in a small bowl. Taste it — it should be bright and just a little tangy.

  2. Spread a generous spoonful of ricotta on each crostini. It's fine if it's thick. Top each one with a few roasted grapes and any syrupy juices from the pan.

  3. Drizzle everything with honey, crack plenty of black pepper over the top, and scatter on fresh thyme if you're using it. Serve immediately while the bread is still crisp.

Notes

If you only have skim or part-skim ricotta, it'll still work but the texture is a bit watery — draining it through a fine mesh strainer for 20 minutes helps. Red grapes work better than green here; they get sweeter and jammier. Leftovers don't really hold up (the bread goes soft), so assemble only what you'll eat. The roasted grapes themselves keep in the fridge for 3 days and are excellent on oatmeal.
