This hash started as a fridge-clearing situation on a Tuesday night and it’s become one of the things I make most often. Harissa paste does the heavy lifting here — it’s got heat, depth, a little smokiness, and it glazes onto the potatoes in a way that plain spices just don’t. The potatoes come out with these dark, slightly charred edges, the eggs settle into little nests in the middle, and the feta melts just enough to get creamy without completely disappearing. It’s fast. Genuinely.

The whole thing comes together in under 35 minutes, and most of that is just the toaster oven doing its thing while you’re not doing much. If you’ve got a decent toaster oven baking pan with a low rim, you’re in good shape — good airflow underneath is what gets the potatoes actually crispy instead of soft and sad.

One thing I’ve noticed: baby potatoes work better here than russets or large Yukons. They hold their shape, they get crispy without drying out, and you don’t have to peel anything. Just halve them and go. The red onion and bell pepper aren’t just filler — they caramelize nicely at this temperature and add a sweetness that balances the harissa’s kick.

If you’re not already set up with a solid countertop appliance, this recipe is a pretty convincing argument for getting one — a toaster oven with convection makes a real difference when you’re going for crispiness. That said, it works fine in a standard one too, just give it a few extra minutes.

  1. Preheat your toaster oven to 425°F on the convection or roast setting if you have it. Line the toaster oven baking pan with foil and give it a light coat of oil or cooking spray — potatoes have a way of gluing themselves to everything.

  2. In a large bowl, toss the halved potatoes, red onion chunks, and diced bell pepper with the olive oil, harissa paste, smoked paprika, garlic powder, salt, and pepper. Really get in there and coat everything well. The harissa should turn the whole thing a deep, ruddy orange.

  3. Spread everything out in a single layer on your prepared pan. Don't crowd it — if things are piled up, they'll steam instead of crisping. Roast for 15 minutes.

  4. Pull the pan out and give everything a good stir. The potatoes should be starting to get golden on the cut sides. Use a spoon to nudge the vegetables around and create two small wells in the hash.

  5. Crack one egg into each well. Sprinkle a little salt over the eggs. Slide the pan back in and roast for another 6 to 8 minutes, until the egg whites are just set but the yolks are still a bit jiggly. I pull mine at 6 minutes because I like a runny yolk, but go to 8 if you don't.

  6. Scatter the crumbled feta over everything straight out of the oven — it'll soften slightly from the heat. Finish with fresh parsley, dill if you're using it, and that squeeze of lemon. Eat right away, directly from the pan if you feel like it.

Notes

Harissa brands vary a lot in heat level. If yours is very spicy, start with 1 tablespoon and taste the mixture before roasting. You can always add more. If you only have a regular toaster oven without convection, bump the temp to 435°F and add 3 to 4 minutes to the potato roasting time. Leftovers reheat fine — just skip reheating the eggs, those don't really come back. Make a fresh egg the next day and toss it on reheated potatoes.
