I’ve made baked potatoes in every possible way — regular oven, microwave, wrapped in foil directly on a rack — and the air fryer version is genuinely my favorite. The skin gets this almost shatteringly crisp texture that I’d honestly put up against any steakhouse potato. The toaster oven does a brilliant job too, especially if your air fryer basket is too small to fit four at once.

The whole method comes down to two things: a very dry potato and enough heat. Moisture is the enemy of crispy skin, so patting them down and skipping the foil isn’t optional. Olive oil and salt go directly on the skin. That’s it. You don’t need to do anything else before they go in. If you’re cooking for a crowd and working with a toaster oven, a toaster oven wire rack that fits your specific model makes a real difference — the airflow underneath is what gives you that crisp bottom.

Toppings are where you get to have opinions. Butter and chives is the classic and I’m not going to argue with it. But lately I’ve been doing sour cream plus a little sharp cheddar, finished with flaky salt, and it’s hard to beat. If you want to keep it dairy-free, a drizzle of good olive oil and some za’atar actually works really well.

Prep

  1. Dry your potatoes really well. This is the one step people skip, and it's exactly why their skins come out soft. Pat them with a kitchen towel after washing, then let them sit on the counter for a few minutes.

  2. Rub each potato all over with olive oil — use your hands, it's faster. Sprinkle generously with kosher salt, the garlic powder if you're using it, and black pepper. Pierce each potato 8–10 times with a fork. Don't skip the piercing.

Air Fryer Method

  1. Preheat your air fryer to 400°F for 3 minutes.

  2. Place the potatoes in the basket in a single layer. Don't stack them. If your air fryer is small, cook in two batches.

  3. Air fry at 400°F for 40–45 minutes, flipping once at the halfway point. They're done when a skewer or thin knife slides through the center with zero resistance and the skin feels dry and crisp to the touch. Larger potatoes may need the full 45.

  4. Let them sit for 2–3 minutes before cutting. Slice open, fluff the inside with a fork, and load on your toppings.

Toaster Oven Method

  1. Preheat your toaster oven to 425°F. Place the potatoes directly on the wire rack — not on a pan, which will steam the bottoms and make the skin soft.

  2. Bake for 50–60 minutes, flipping once around the 30-minute mark. Test for doneness the same way: a skewer through the center should feel like it's going through warm butter. The skin should look slightly wrinkled and feel firm.

  3. Rest for a couple of minutes, then split, fluff, and top as you like.

Notes

Russets are really the only potato worth using here — their thick skin crisps up better than anything else, and the starchy flesh gets that properly fluffy texture. Yukon Golds are fine if that's all you have, but expect a creamier, slightly denser interior and cook them for about 5 minutes less. Don't wrap in foil, ever. Foil traps steam and you'll end up with soft skin, which defeats the whole point. Leftovers reheat surprisingly well in the air fryer at 375°F for about 8 minutes.
