Air Fryer or Toaster Oven Burgers (Juicy Inside, Perfectly Browned Outside)

Juicy homemade burgers cooked in your air fryer or toaster oven with a properly browned exterior — no grill required and genuinely better than you'd expect
Jump to Recipe

I was skeptical the first time I tried making burgers in an appliance that also makes toast. Seemed wrong. But after a few rounds of testing, I’ll say it plainly: they’re really good. The air fryer in particular does something impressive — circulating hot air all around the patty gets you a genuinely browned exterior without drying out the inside, which is the whole thing with burgers.

The toaster oven method works too, especially if you lean on the broiler. That top-down direct heat gives you a nice crust on one side at a time, and it’s honestly not that different from what a cast iron would do. Takes a few minutes longer than the air fryer, but not by much. Either way, you’re eating a real burger in under 25 minutes with basically nothing to clean up.

You don’t need special equipment beyond whichever appliance you’re using. If you’re working with a basket-style air fryer, 4 quarter-pound patties should fit in a single layer — just don’t try to cram in more than that. Toaster oven folks, grab a small broiler pan if you have one; it lets the fat drip away and helps with browning. A regular foil-lined pan works fine too.

One thing worth knowing: 80/20 ground beef is the move here. Leaner beef loses too much moisture in this kind of dry heat. I know some people feel strongly about going leaner, but for appliance burgers, the fat is doing real work.

Honestly great burgers made entirely in your air fryer or toaster oven — no grill, no mess, no babysitting a skillet. They come out juicy in the middle with a real browned crust.

Instructions

Make the Patties

  1. Add the ground beef to a large bowl. Pour in the Worcestershire sauce, then sprinkle in the garlic powder, onion powder, salt, and pepper. Mix with your hands just until combined — overworking it makes the patties tough, so stop as soon as everything looks even.

  2. Divide into 4 equal portions, roughly 6 oz each. Shape into patties about 3/4 inch thick. Press your thumb into the center of each one to make a shallow indent — this keeps them from puffing up into a dome while they cook. Refrigerate for 5 minutes while the appliance preheats.

Cook — Air Fryer Method

  1. Preheat your air fryer to 375°F for 3 minutes.

  2. Place the patties in a single layer in the basket. Don't stack them, and leave a bit of space between each one so air circulates properly.

  3. Cook at 375°F for 8 minutes. Flip, then cook another 3-4 minutes. For medium, you're aiming for an internal temp of 160°F — use an instant-read thermometer if you have one. If you're adding cheese, lay a slice on each patty in the last 60 seconds of cooking and let the residual heat melt it.

  4. While the burgers rest for 2 minutes, place your buns cut-side-down in the air fryer at 375°F for about 90 seconds until lightly toasted.

Cook — Toaster Oven Method

  1. Preheat your toaster oven to 425°F on the broil setting, or use the broil function if it has one. Line a small rimmed baking sheet or broiler pan with foil.

  2. Place the patties on the prepared pan. Broil on a rack positioned 4-5 inches from the element for 5-6 minutes per side. You want real browning on the outside — don't pull them too early.

  3. Add cheese in the last minute if using. Internal temp should hit 160°F. Rest 2 minutes. Toast the buns cut-side-up under the broiler for 1-2 minutes, watching closely because they go from golden to burnt fast.

Assemble

  1. Stack however you like — I go bottom bun, mayo, lettuce, tomato, burger, onion, mustard, top bun. Serve immediately.

Notes

80/20 beef is really non-negotiable for this method. I've tried 90/10 and they come out dry every time. The thumb-indent trick sounds fussy but it genuinely works. If your toaster oven doesn't have a true broil setting, roast at 450°F and add a couple extra minutes per side. Frozen patties work too — add about 4-5 extra minutes total and check the internal temp.
