Some things don’t need a grill to be good. Hot dogs are one of them. I’ll be honest — I resisted cooking hot dogs in anything other than a cast iron pan for years, convinced that was the only way to get a proper char. Then I tried them in the air fryer on a weeknight when I didn’t feel like dealing with anything, and I haven’t gone back.

The scoring trick is everything. A few shallow diagonal cuts let the hot dog skin crisp up and curl open at the edges instead of just getting uniformly warm and a little rubbery. Both the air fryer and the toaster oven do this really well — the air fryer is faster and gives you a slightly deeper char, while the toaster oven is better if you’re making more than four at a time and need a bit more tray space. A good toaster oven with a convection setting handles this recipe especially well, since that circulating air mimics what the air fryer does.

You don’t need much. Four hot dogs, four buns, a little butter for toasting the buns. The toppings are up to you — I’m a yellow mustard and diced onion person, but I won’t tell you what to do with your own hot dog. If you want a dedicated air fryer basket that’s easy to clean after something like this, a non-stick coated one makes the whole process even faster.

This takes under 10 minutes start to finish. It’s a good weeknight dinner, a good lunch, genuinely solid for feeding kids who won’t sit still long enough for anything more involved. Simple food, done well.

Score the Hot Dogs

  1. Take a sharp knife and score each hot dog with 4-5 shallow diagonal cuts, spacing them about an inch apart. Don't cut all the way through — just deep enough to break the skin. This is what actually gets them crispy instead of split open and weirdly bloated.

Air Fryer Method

  1. Preheat your air fryer to 390°F for 3 minutes.

  2. Place the scored hot dogs in the basket in a single layer. Don't stack them.

  3. Cook for 5-6 minutes, flipping once at the halfway point. They should be nicely browned with the score marks opened up and slightly charred at the edges. That's what you want.

  4. While the dogs rest for a minute, lightly butter the inside of each bun and place them in the air fryer cut-side up at 350°F for about 90 seconds. Watch them — buns go from toasted to burned fast.

Toaster Oven Method

  1. Preheat your toaster oven to 425°F on the broil or bake setting. If your toaster oven has a convection option, use it.

  2. Line the toaster oven tray with foil (cleanup is much easier) and place the scored hot dogs on it.

  3. Cook for 8-10 minutes, turning once at the 5-minute mark. If your toaster oven runs hot, check at 7. You're looking for the same thing: browned, slightly blistered, score marks wide open.

  4. Butter the buns and slide them in cut-side up for the last 1-2 minutes of cooking, just to get them lightly golden.

Assemble and Serve

  1. Nestle each hot dog into a toasted bun. Load up with mustard, ketchup, onion, relish — whatever you like. Eat immediately. They don't hold well once dressed, which is a problem you usually won't have.

Notes

Scoring is non-negotiable if you want crispy skin — it's the one thing that separates a good hot dog from a great one. Chicken or turkey hot dogs work fine here too, though the skin crisps a bit differently (still good, just less snappy). If you're loading these up Chicago-style, skip the ketchup and add sport peppers, tomato slices, a pickle spear, celery salt, and yellow mustard on a poppy seed bun. No judgment here. Leftover cooked hot dogs reheat well in the air fryer at 350°F for 2 minutes.
