I’ve made broccoli a hundred different ways and this is the one I actually keep coming back to. It’s fast — like, embarrassingly fast. The air fry setting on a combo toaster oven runs hot and circulates air, so you get those crunchy, slightly charred floret tips that are genuinely hard to achieve any other way without cranking a full-size oven up to broil and hovering over it. If you don’t have one yet, an air fryer toaster oven combo is the appliance I recommend most for small-batch cooking like this.

The technique here is simple. Oil, garlic, heat, then Parmesan goes on at the very end so it melts rather than burns. Lemon goes on before the cheese for the last couple minutes, which sort of steams into the florets just slightly. It sounds fussy written out but it’s actually a ten-second step.

One thing: buy a real head of broccoli, not the pre-cut bag florets. The pre-cut ones are usually too wet and too uniform in size, and they steam instead of roast. A whole head gives you some variety — some bits get super crispy, some stay a little more tender in the middle. That mix of textures is what makes this worth eating instead of just tolerating. I also use a fine grater for the Parmesan rather than pre-shredded — it melts faster and sticks better to the florets. A Microplane grater does this beautifully if you don’t already own one.

This works as a side for almost anything. I’ve eaten it straight off the pan with a fried egg on top for lunch and had zero regrets.

  1. Preheat your air fryer toaster oven to 400°F on the air fry or convection setting. Let it run for at least 3 minutes — a properly preheated oven is what gets you crispy edges instead of steamed, sad broccoli.

  2. Toss the broccoli florets in a large bowl with the olive oil, sliced garlic, salt, pepper, and red pepper flakes if using. Make sure every piece is coated. Don't crowd the bowl or you'll end up with patchy seasoning.

  3. Spread the broccoli in a single layer on the air fryer basket or the oven's wire rack set over the drip pan. Single layer is non-negotiable here. If you pile them up, they'll steam instead of roast.

  4. Air fry at 400°F for 10–12 minutes, shaking the basket or flipping the florets once at the 6-minute mark. You're looking for dark, almost-charred tips and bright green stems. A little char is the whole point.

  5. Pull the basket out, squeeze the half lemon over everything, then scatter the Parmesan on top. Slide it back in for 1–2 more minutes, just until the cheese melts and gets a little golden at the edges.

  6. Serve immediately with the lemon wedges on the side. It does not hold well — eat it hot.

Notes

Dry your broccoli florets well before tossing in oil. Moisture is the enemy of crispy. If you washed them, give them a good 10 minutes on a kitchen towel first. For extra richness, swap the olive oil for melted butter — equally good, different vibe. The garlic slices will crisp up and get a little toasty, which I think is the best part of the whole dish. If your toaster oven runs hot (mine does), check at 9 minutes. You can always add time, can't take it back.
