I’ve made broccoli about a thousand different ways, and air frying it in a toaster oven is genuinely my favorite. Not because it’s fast (though it is), but because the results are just better than what I get from a full-size oven. The concentrated hot air gets those floret tips properly charred — a little dark, a little crunchy — without the stems going mushy. It’s the kind of broccoli that disappears off the plate.
The technique is pretty simple. You need a good air fryer toaster oven that actually holds 400°F steady, dry florets, and enough space for a single layer. That’s basically it. The garlic slices crisp up alongside the broccoli, which is one of those things that sounds subtle but is actually the best part of the whole dish.
I add the lemon and Parmesan after the tray comes out — the heat of the broccoli does the work from there. Fresh lemon zest goes in before cooking (it gets a little toasty and fragrant), and the juice goes on at the end so it stays bright. If you don’t have a microplane for the Parmesan, a fine grater is worth getting — the powdery texture coats the florets instead of just sliding off.
This works as a side for pretty much anything, but honestly I’ve eaten it as dinner with a fried egg on top more than once and I’m not embarrassed about it.
Air Fryer Toaster Oven Broccoli with Garlic, Lemon, and Parmesan
Crispy-edged, deeply savory roasted broccoli that comes together in under 20 minutes using the air fry setting on your toaster oven. The florets get genuinely caramelized — not steamed — with a hit of garlic, lemon zest, and a snowfall of Parmesan right at the end.
Ingredients
Instructions
-
Preheat your air fryer toaster oven to 400°F on the air fry setting. Give it a full 3–4 minutes to come up to temp — it matters for getting that first blast of hot air on the broccoli.
-
While it preheats, toss the broccoli florets with the olive oil, sliced garlic, salt, pepper, red pepper flakes if using, and lemon zest. Do this right on the air fryer basket or tray — less to wash.
-
Spread the florets out in a single layer. Crowding is the enemy here. If your toaster oven is on the smaller side, do two batches rather than piling them on top of each other.
-
Air fry at 400°F for 11–14 minutes, shaking the basket or flipping with tongs at the halfway point. You're looking for dark, almost charred edges on the tips and bright green stems. Eleven minutes gives you tender-crisp; 14 gives you maximum crunch on the edges. I go 13 myself.
-
Pull the tray out and immediately squeeze the lemon juice over everything, then shower the Parmesan on top. The residual heat melts it into the florets just enough. Serve right away.
Notes
Dry broccoli is crispy broccoli. If your florets have been sitting in the fridge, pat them dry with a paper towel before tossing in oil. Wet broccoli steams instead of roasting and you'll be sad.
The sliced garlic matters — thin slices turn into little crispy chips in the air fryer. Minced garlic tends to burn before the broccoli finishes.
Parmesan goes on after cooking, not before. If you add it during the cook time it scorches.
Leftovers are actually still pretty good cold in a grain bowl or tossed into pasta. They won't be crispy but they'll be flavorful.
