Brussels sprouts have a reputation problem that I think is completely undeserved. The mushy, sulfur-smelling ones from a pot of boiling water — yeah, those earn the bad press. But these? Totally different situation. High heat, a little oil, cut-side down on a hot tray, and the air fryer toaster oven does something almost magical to them. The flat face caramelizes and goes almost nutty-sweet, the outer leaves get crispy like tiny chips, and the inside stays tender. I make these at least once a week from October through March.
The air fry setting is what makes this work so well. It circulates hot air around the sprouts constantly, so you get even browning without having to babysit. A good air fryer toaster oven with a reliable convection fan will have these done in 18 minutes flat. Regular bake mode works too, just add a few extra minutes and flip more carefully.
The ingredient list is short on purpose. Olive oil, garlic, salt, lemon. That’s really all you need. The Parmesan at the end is optional but I’d be lying if I said I skip it — a light snowfall of it right out of the oven is pretty hard to argue with. If you want to keep it vegan, just leave it off. A mesh air fryer basket tray helps the airflow circulate underneath the sprouts, which speeds things up and gets the bottoms crispier than a solid pan would.
Serve these as a side with pretty much anything, or honestly just eat them straight off the tray while standing over the oven. I won’t judge.

Preheat your air fryer toaster oven to 400°F on the air fry or convection setting. Give it a full 3-4 minutes to come up to temp — this matters for the crispiness.

Trim the stem end off each Brussels sprout and halve them straight through the middle. Any loose outer leaves that fall off? Keep them. They turn into little crispy chips in the oven and they're honestly the best part.

Toss the halved sprouts and loose leaves with the olive oil, minced garlic, salt, pepper, and red pepper flakes in a large bowl. Make sure everything is coated — dry sprouts don't crisp up the same way.

Arrange the sprouts cut-side down in a single layer on the air fryer basket or tray. Don't stack them. If your oven is on the smaller side, cook in two batches rather than crowding.

Air fry at 400°F for 15–18 minutes, shaking or flipping halfway through at the 8-minute mark. You're looking for deep golden-brown on the cut sides and some charring on the outer leaves. Pale and soft is not what we want here.

Pull them out, hit them with the lemon juice and zest right away, and give them a quick toss. Taste for salt. Finish with grated Parmesan if you're going that route, and serve immediately.
Notes
Cut-side down is non-negotiable if you want that caramelized flat face. Smaller sprouts (around golf-ball size) work better than giant ones — the big ones can be dense in the center by the time the outside is crispy. If yours are large, quarter them instead of halving. Don't skip the loose leaves; they crisp up faster than the sprouts themselves so just watch them — pull any that are done early. Leftovers reheat okay at 375°F for 5 minutes but they're really best fresh.
