Preheat your air fryer toaster oven to 400°F on the air fry setting. Give it a full 5 minutes to come up to temperature — it makes a real difference for that first burst of crispiness.

Pat the cauliflower florets completely dry with paper towels. This is the one step people skip and then wonder why their cauliflower steams instead of crisps. Dry florets. Always.

Toss the dried florets in a large bowl with the olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Get in there with your hands so every piece is coated.

Arrange the florets in a single layer in the air fryer basket or on the air fryer tray. Don't crowd them — work in two batches if your appliance is on the smaller side (most 6-quart models can handle this in one go, but a compact unit will need two rounds).

Air fry at 400°F for 18 to 22 minutes, flipping the florets once at the halfway point. You're looking for deep golden-brown edges and a slight char on the tips. Ours usually hits that mark right around 20 minutes.

While the cauliflower cooks, whisk together the tahini, lemon juice, warm water, grated garlic, salt, and cayenne in a small bowl. It'll seize up and look lumpy at first — just keep whisking and add another splash of water if needed until it's smooth and pourable. Should be about the consistency of honey.

When the cauliflower comes out of the oven, pile it onto a serving plate immediately. Drizzle generously with the lemon tahini, scatter over the parsley and sesame seeds, and serve with a lemon wedge on the side. Eat it hot.
Notes
Dry florets are non-negotiable for crispiness — even a little surface moisture turns into steam in the air fryer. If your tahini is particularly thick or bitter (brand quality varies a lot), start with just 1 tablespoon of lemon juice and taste before adding more. Leftovers keep in the fridge for up to 3 days; reheat at 375°F on air fry for 5-6 minutes to bring the crunch back. The tahini sauce keeps separately in a jar in the fridge for a week.
