You get real crispiness — the kind where the skin actually cracks a little when you bite in — without heating up your whole kitchen or dealing with a pot of hot oil. The trick is simple: baking powder in the dry rub, and not overcrowding the basket. That’s it. No elaborate multi-step process. If you don’t already have an air fryer toaster oven combo, this recipe alone might convince you.

The baking powder thing sounds weird, I know. It’s alkaline, which raises the pH of the chicken skin and helps it brown faster and get that almost deep-fried texture. I first read about it years ago and was skeptical. Tried it, never looked back. Just make sure you’re using aluminum-free baking powder — the regular kind with aluminum can leave a faint metallic taste on something this simple.

Prep the Wings

  1. Pat the wings completely dry with paper towels. Seriously, don't skip this. Any moisture left on the skin is the enemy of crispiness.

  2. In a large bowl, toss the wings with the baking powder, salt, garlic powder, smoked paprika, and pepper until every piece is evenly coated. The baking powder draws out surface moisture and gives you that crackly skin.

  3. If you have 20-30 minutes to spare, let the coated wings sit uncovered on a rack at room temperature. Not mandatory, but it helps a lot.

Air Fry

  1. Preheat your air fryer toaster oven to 400°F on the air fry setting for 3-5 minutes.

  2. Arrange the wings in a single layer on the air fryer basket or rack — don't crowd them. Work in two batches if needed. Overlapping wings steam instead of crisp, and that's exactly what you don't want.

  3. Air fry at 400°F for 12 minutes, then flip each wing. Cook for another 10-13 minutes, until the skin is deep golden and visibly blistered. Internal temp should hit 165°F.

Make the Sauce and Finish

  1. While the second batch finishes, whisk together the hot sauce, melted butter, honey, and garlic powder in a small bowl. Taste it — if you want more heat, add a splash more hot sauce.

  2. Toss the hot wings in the buffalo sauce right away. They'll soak it up fast. Serve immediately with celery, your dip of choice, and parsley scattered on top if you're feeling it.

Notes

Baking powder is non-negotiable for crispy skin — don't substitute baking soda. If your wings are on the larger side, add 3-4 extra minutes to the second cook time. Leftovers reheat well in the air fryer toaster oven at 375°F for 5-6 minutes — they get almost as crispy as fresh. You can also swap the buffalo sauce for honey garlic, teriyaki, or lemon pepper butter if you want something milder. Just sauce them at the end either way.
