Crispy Air Fryer or Toaster Oven Frozen Salmon (Flaky, Golden, No Thawing Required)

Cook frozen salmon fillets to flaky, golden perfection in your air fryer or toaster oven — no thawing needed, ready in under 20 minutes

I was honestly skeptical the first time someone told me to cook frozen salmon without thawing it. Seemed like a shortcut that would end in sadness — rubbery outside, cold in the middle. But it actually works, and now it’s how I make salmon on weeknights when I forgot to pull anything out of the freezer. Which is most weeknights.

The two-stage method here is what makes it click. First, a short blast of heat loosens the ice and gets the fish opaque throughout. Then you pat it dry, add the glaze, and go back in for the real cook. Skipping that pat-dry step is the one thing that’ll wreck it — the moisture turns to steam and you lose all the caramelization on the surface. A good air fryer basket with some space between the fillets also helps a lot; crowding them traps that steam and you end up poaching instead of roasting.

The glaze is simple — olive oil, soy sauce, a touch of honey, garlic, smoked paprika. Nothing fussy. It caramelizes nicely in both the air fryer and the toaster oven, though I think the air fryer gives you slightly better texture on the top. The toaster oven gets you there too, especially if you hit the broiler for the last few minutes. If you’re using a toaster oven regularly for fish, a toaster oven baking pan with a low rim makes cleanup a lot less annoying — the glaze drips.

This recipe works with whatever frozen salmon you have. Skin-on, skinless, Atlantic, sockeye — all fine. Just check for doneness with a fork rather than going strictly by time, because fillet thickness varies more than the packaging suggests.

Instructions

Make the Glaze

  1. In a small bowl, whisk together the olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and pepper. Set aside.

First Cook (Thaw Phase)

  1. Take your salmon fillets straight from the freezer — don't rinse them, don't pat them dry yet. For the air fryer: place them in the basket and cook at 390°F for 7 minutes. For the toaster oven: place them on a lightly oiled baking pan or foil-lined tray and bake at 400°F for 8 minutes. This first stretch just gets the ice off and the exterior opaque. That's it.

  2. Pull them out and use paper towels to pat the surface dry. The moisture that was frozen is now on the surface, and you really want to blot it off before the glaze goes on — otherwise it steams instead of crisping.

Glaze and Finish

  1. Brush the glaze generously over the top and sides of each fillet. Don't skip the sides.

  2. For the air fryer: return to the basket and cook at 400°F for 8 to 10 more minutes, until the glaze is set and slightly caramelized and the thickest part of the fillet flakes easily with a fork. For the toaster oven: slide the tray back in and broil on high for the last 2 to 3 minutes after baking for 7 to 8 minutes at 400°F — that's what gives you the caramelized top. Watch it. Broilers vary a lot.

  3. Let the fillets rest for 2 minutes before serving. Squeeze lemon over the top and scatter on the parsley if you're using it.

Notes

Thicker fillets (over 1 inch) may need 2 to 3 extra minutes in the finish cook — just check with a fork. If your salmon has skin and it's sticking, slide a thin spatula underneath before trying to lift it. The skin usually releases once it's fully cooked. I've made this with Atlantic and sockeye; sockeye cooks faster and is a bit less forgiving if you go over time, so check it a minute early. Leftovers reheat surprisingly well in the air fryer at 350°F for 3 to 4 minutes — way better than the microwave.
