These crispy sweet potato and black bean burritos come out golden and crunchy on the outside with a melty, spiced filling — ready in under 30 minutes in your air fryer or toaster oven

Frozen burritos from the store always disappoint me. The filling is usually mushy, the tortilla is somewhere between steamed and sad, and they taste like they gave up. These homemade ones are different. The sweet potato gets roasted first so it’s actually caramelized and a little sweet, the beans add something hearty, and because you brush the outside with olive oil before cooking, the tortilla comes out genuinely crispy — like, audibly crunchy when you bite it. That’s the whole point.

You don’t need much special equipment for this. A basic air fryer toaster oven handles both steps easily, or you can use a standalone air fryer and do the sweet potato first, then the burritos in two batches. Either way, you’re looking at under 30 minutes start to finish. Most of that is just the sweet potato roasting — the actual assembly takes maybe five minutes.

The filling here is vegetarian and pretty flexible. I’ve made it with corn, without corn, with a little chipotle powder instead of cayenne, with pepper jack cheese instead of cheddar. It’s hard to mess up. The one thing I’d say is actually important is getting the sweet potato pieces small — half an inch or so. Bigger chunks don’t cook through fast enough at these temperatures, and you’ll end up with a filling that’s got some crunchy raw bits in it, which isn’t great. A sharp knife and some patience go a long way.

If you want to make these for a crowd, a toaster oven baking sheet is the move — you can fit all four burritos at once and get everything done in one round. The air fryer is faster per batch, but depending on the size of your basket, you’re probably doing two batches of two. Both methods work great. Just don’t try to crowd them — give each burrito a little space so the hot air can actually circulate and do its job.

Instructions

Roast the Sweet Potato

  1. Toss the sweet potato cubes with olive oil, cumin, smoked paprika, garlic powder, cayenne (if using), and salt until everything's evenly coated. Don't skip this step — it's what gives the filling actual flavor instead of just tasting like bland sweet potato.

  2. Air fryer: Spread the sweet potato in a single layer in the basket. Cook at 400°F for 10-12 minutes, shaking once halfway, until the edges are a little caramelized and the cubes are tender through. Toaster oven: Spread on a small baking sheet or foil-lined tray. Roast at 425°F for 14-16 minutes, flipping once around the 8-minute mark.

  3. Transfer the cooked sweet potato to a bowl. Add the black beans, corn, and lime juice. Stir gently and taste — you might want a pinch more salt. Let it sit for a couple of minutes while you set everything else up.

Assemble the Burritos

  1. Lay a tortilla flat on the counter. Add about 3/4 cup of the filling in a horizontal strip just below the center of the tortilla — don't overfill or it'll be a nightmare to roll. Add a generous pinch of shredded cheese on top of the filling.

  2. Fold the two sides in over the filling, then roll from the bottom up, pulling the wrap tight as you go. Seam-side down. Repeat with the remaining tortillas.

  3. Brush or lightly spray the outside of each burrito with olive oil. This is what gets you the crispy golden exterior — don't skip it.

Crisp the Burritos

  1. Air fryer: Place the burritos seam-side down in the basket. You may need to cook in two batches depending on the size of your basket. Cook at 375°F for 5-6 minutes, flip carefully, then cook another 3-4 minutes until the outside is golden and noticeably crispy. Toaster oven: Place seam-side down on the rack or a lightly oiled baking sheet. Bake at 400°F for 8-10 minutes, flip, then bake another 4-5 minutes. Broil for the last 1-2 minutes if you want a little extra char on top — I almost always do.

  2. Serve immediately with sour cream and salsa on the side. They do not hold well once they've cooled — the crispy shell softens fast, so eat them while they're hot.

Notes

Make-ahead tip: You can prep the filling up to 3 days in advance and store it in the fridge. Just assemble and cook the burritos fresh when you're ready to eat. If your tortillas crack when you roll them, warm them for 15-20 seconds in the microwave first — cold tortillas are stubborn. For extra crunch, sprinkle a little shredded cheese directly on the outside of the burrito before cooking — it melts and crisps right onto the shell. Want to add more protein? A fried egg or some scrambled egg tucked inside makes this a really solid breakfast burrito too.
