Toaster Oven Crispy Black Bean and Roasted Poblano Quesadillas with Lime Crema

These toaster oven quesadillas get genuinely crispy on the outside while the filling stays molten — charred poblano, black beans, and melty Monterey Jack with lime crema
Jump to Recipe

I made these on a Tuesday night when I had half a can of black beans and two poblanos sitting in the fridge and zero interest in doing real cooking. The result was so good I’ve made them probably eight times since. There’s something about the toaster oven method — the direct heat from a small enclosed space — that gets flour tortillas genuinely crispy in a way a skillet sometimes doesn’t, especially if you’re making more than one at a time.

The poblano is the thing here. Broiling them in the toaster oven takes about 12 minutes and the char they pick up is smoky, slightly sweet, and nothing like a raw pepper. Combined with the mashed black beans (cumin and smoked paprika, that’s it), you get a filling that’s savory and substantial without being heavy. The Monterey Jack melts beautifully and doesn’t compete with the other flavors. If you’ve got a toaster oven baking sheet that fits your machine properly, this recipe is genuinely effortless.

The lime crema takes about 90 seconds to make and it’s not optional. I mean, you can skip it, but you’ll miss it. The brightness cuts through the richness of the cheese and ties everything together. A good reliable toaster oven that holds a steady 425°F is really all the equipment you need here — this is weeknight food that happens to be really satisfying.

Instructions

Char the Poblanos

  1. Set your toaster oven to broil, as high as it'll go. Place the whole poblano peppers directly on the wire rack and broil for 10-12 minutes, turning once halfway through, until the skins are deeply blistered and blackened in spots. They should look a little alarming — that's exactly what you want.

  2. Transfer the peppers to a bowl, cover tightly with plastic wrap, and let them steam for 5 minutes. Then peel off the skins (they'll slip right off), remove the stems and seeds, and slice the flesh into thin strips. Set aside.

Season the Beans

  1. In a bowl, toss the drained black beans with the cumin, smoked paprika, and salt. Roughly mash about a third of the beans with a fork — this helps the filling stick together and not fall out everywhere when you cut the quesadillas.

Make the Lime Crema

  1. Stir together the sour cream, lime zest, lime juice, grated garlic, cilantro if using, and salt. Taste it. It should be bright and a little punchy. Refrigerate until ready to serve.

Assemble and Toast

  1. Switch your toaster oven to bake at 425°F. Lightly brush one side of each tortilla with olive oil. Lay two tortillas oil-side-down on your toaster oven baking sheet (you'll likely need to work in batches depending on your machine's size).

  2. Scatter half the bean mixture over each tortilla, leaving a half-inch border. Top with the poblano strips, red onion slices, and then an even layer of shredded cheese. Lay the remaining tortillas on top, oil-side-up, and press down gently.

  3. Bake for 7-9 minutes, until the top is golden and starting to crisp. Carefully flip using a wide spatula — this is the only slightly nerve-wracking part — and bake another 4-5 minutes until both sides are crispy and the cheese is fully melted.

  4. Let them rest for 2 minutes before cutting. Seriously, don't skip this. The filling needs a moment to set or it slides right out. Cut into wedges and serve with the lime crema.

Notes

Poblanos vary a lot in heat — most are mild but occasionally you get a spicy one. If you want zero heat, swap them for green bell peppers. Freshly shredded cheese melts way better than the pre-shredded bagged kind, which has anti-caking coatings that make it gummy. If your toaster oven runs small, do one quesadilla at a time. They reheat well at 375°F for about 5 minutes the next day and stay crispier than you'd expect.
