I made these by accident one evening when I had half a wheel of brie that needed to be used and exactly one apple left in the bowl. Didn’t expect much. Ate two of them standing over the sink. That’s about the highest compliment I can give a recipe.
The toaster oven does something to a quesadilla that a skillet just doesn’t — it crisps both sides at once without you having to babysit it, and the dry heat means the tortilla gets this almost flaky, cracker-like exterior instead of getting greasy. You do need a toaster oven baking sheet that actually fits your machine, which sounds obvious but I’ve watched so many people try to cram a full sheet pan into a six-slice toaster oven and wonder why things cook unevenly.
The apple situation is simple: roast the slices first with a little butter and brown sugar until they’re soft and caramelized. Takes ten minutes. It’s the difference between apple slices that taste raw and steamed versus ones that taste like they belong in a nice restaurant appetizer. Honeycrisp is my go-to here because it holds its shape and doesn’t turn to mush, but any firm apple works fine.
If you’re going to make these regularly — and you might — it’s worth having a toaster oven with convection in your corner. The fan setting speeds up browning noticeably and the tortilla edges crisp faster. Not required. Just nice.
Toaster Oven Crispy Brown Butter Roasted Apple and Brie Quesadillas with Honey and Walnuts
Flour tortillas filled with creamy brie, sweet roasted apple slices, and toasted walnuts, cooked in a toaster oven until golden and crispy. A drizzle of honey at the end pulls it all together.
Ingredients
Instructions
-
Preheat your toaster oven to 400°F on the bake setting. Line the toaster oven tray or a small baking sheet with foil — the apple juices will drip and you'll thank yourself later.
-
Toss the apple slices with the butter (cut it into small pieces), brown sugar, cinnamon, and a pinch of salt directly on the lined tray. Spread them out in a single layer. Roast for 10 minutes, until they're soft and starting to caramelize at the edges. They don't need to be perfect — a little browning is exactly what you want.
-
While the apples roast, toast the walnuts in a dry pan on the stovetop over medium heat for 2-3 minutes, shaking the pan, until fragrant. Set aside. (You can skip this step if you're short on time, but toasted walnuts taste way better.)
-
Pull the apples out. Push them to one side of the tray and set aside. If your toaster oven tray is too small to cook quesadillas on, use the oven's rack with the foil tray underneath to catch drips.
-
Lay one tortilla flat. Arrange half the brie slices on one half of the tortilla, then layer on half the roasted apple slices and half the walnuts. Add a few thyme leaves if you're using them. Fold the tortilla in half over the filling. Brush both sides lightly with olive oil or melted butter. Repeat with the second tortilla.
-
Place both folded quesadillas on your toaster oven tray or rack. Bake at 400°F for 6-8 minutes, then carefully flip with a spatula and bake another 4-5 minutes. You're looking for a deep golden color and visible crispiness — not just warm. If your toaster oven runs cool, give it an extra 2 minutes.
-
Let them sit for a minute before cutting — the brie is molten and will run everywhere if you rush it. Slice each quesadilla into 3 wedges, drizzle with honey, and eat immediately.
Notes
Brie can be swapped for camembert or even a mild goat cheese if that's what you have. Pears work just as well as apple here — maybe better, honestly. If your toaster oven only fits one quesadilla at a time, cook them in batches and keep the first one warm on a plate loosely tented with foil. Don't skip the honey drizzle at the end — it's what makes the whole thing taste intentional instead of thrown together.
