If your toaster oven is on the smaller side, roast the cauliflower and chickpeas in two batches rather than cramming them in — crowding is the enemy of crispiness. Leftovers: store the roasted vegetables and the whipped ricotta separately in the fridge. The ricotta keeps well for 3 days. Re-crisp the cauliflower and chickpeas in the toaster oven at 400°F for about 5-6 minutes before reassembling.
