Tostadas are one of those things I keep coming back to on weeknights — fast, crunchy, endlessly customizable. The problem is most versions involve frying tortillas in a pan full of oil and making a mess of your stove. Toasting them in a reliable toaster oven solves that completely. You get the same crunch, same deep corn flavor, but with way less hassle.
The corn and black beans get roasted together on one pan at high heat until they’re smoky and a little caramelized. That’s the part people always ask me about — it’s not complicated, you just need to keep the layer thin and let the heat do its thing. Smoked paprika and cumin do most of the heavy lifting on flavor.
For the shells, I skip the store-bought pre-made tostadas (they taste like cardboard to me, honestly). Just brush small corn tortillas with oil and bake them directly on the rack. They puff a little, get golden and rigid, and they actually taste like something. You’ll want a small toaster oven baking sheet for the corn and bean step — something with a rim so nothing rolls off.
Assembly is fast. Smashed avocado, the roasted corn-bean mixture, crumbled cotija, cilantro, scallions. Done. These are best eaten immediately — tostadas don’t wait around for anyone.
Toaster Oven Crispy Brown Butter Roasted Corn and Black Bean Tostadas with Avocado and Cotija
Crunchy baked tostadas loaded with smoky roasted corn and black beans, creamy avocado, and salty cotija — ready in about 30 minutes with almost no cleanup.

Instructions
Roast the Corn and Beans
-
Preheat your toaster oven to 425°F on the roast or bake setting. Line a small sheet pan with foil — cleanup later will thank you.
-
In a bowl, toss the corn and black beans with 1.5 tablespoons of the olive oil, smoked paprika, cumin, garlic powder, cayenne (if using), and the salt. Spread everything in a single layer on the sheet pan. Don't crowd it or you'll get steam instead of color.
-
Roast for 15–18 minutes, stirring once halfway through, until the corn has some golden-brown spots and the beans are starting to get a little crispy on the outside. Pull the pan and set it aside.
Crisp the Tostada Shells
-
Brush both sides of each corn tortilla lightly with the remaining olive oil. Arrange them directly on the toaster oven rack or on a second sheet pan — you'll likely need to do this in two batches depending on your toaster oven size.
-
Bake at 400°F for 5–7 minutes per side, flipping once, until the tortillas are deep golden and crack when you press them. They crisp up more as they cool, so don't panic if they still feel a tiny bit soft right out of the oven.
Make the Avocado and Assemble
-
While the shells cool for a minute, mash the avocados in a bowl with the lime juice and salt. I like mine a little chunky, but do whatever you want — smooth is fine too.
-
Spread a generous spoonful of avocado on each tostada shell. Top with the roasted corn and black bean mixture. Scatter cotija, cilantro, and scallions over everything.
-
Add a drizzle of sour cream or Greek yogurt if you're using it, and serve immediately with extra lime wedges on the side. Tostadas go soggy fast, so eat them right away — they're not a leftover situation.
Notes
Corn moisture is the enemy of good browning. If you're using frozen corn, dry it really well with a paper towel before roasting. / Cotija can be hard to find at regular grocery stores — crumbled feta is a solid swap and honestly just as good. / If your toaster oven runs small, roast the corn and beans first, then do the tortillas while you prep the toppings. It only takes an extra few minutes. / Want to add a fried or poached egg on top? Go for it. It makes the whole thing feel more like a real meal.
