Toaster Oven Crispy Brown Butter Roasted Garlic and Lemon Asparagus Frittata Bites with Whipped Ricotta

These toaster oven frittata bites have crispy golden edges, tender roasted asparagus inside, and a cloud of lemony ricotta on top that makes them genuinely hard to stop eating
Jump to Recipe

I made these the first time because I had half a bunch of asparagus going soft in the fridge and exactly zero desire to cook a full breakfast. Frittata bites seemed obvious. What I didn’t expect was how good the toaster oven would be at this — the small enclosed space holds heat really evenly, and the edges of each little egg cup get this crispy, slightly caramelized ring that you just don’t get from a regular oven on a lazy Tuesday.

The roasted garlic is the quiet hero of this recipe. Sliced thin and roasted until the edges go golden, it loses any harshness and turns almost sweet. That, plus the lemon ricotta on top — which takes about 30 seconds to make — turns what could be a basic meal-prep egg muffin into something you’d actually want to serve someone. I’ve made these for brunch with friends and for solo weekday breakfasts and they work equally well for both.

You’ll want a silicone muffin pan for this — it makes getting the bites out so much easier, and the flexible sides let you pop them out without the whole thing falling apart. If you’re still figuring out which appliance to use, any toaster oven with a bake setting will handle this perfectly; I use mine at 375°F and they come out great every time.

Make the full batch even if you’re only feeding yourself. They reheat well, they’re good cold, and honestly having six of them in the fridge on a Wednesday morning feels like a small personal victory.

Ingredients

Roasted Asparagus and Garlic

Frittata

Whipped Lemon Ricotta

Instructions

Roast the Asparagus

  1. Preheat your toaster oven to 425°F on the roast or bake setting. Toss the asparagus pieces and sliced garlic with olive oil, salt, and pepper directly on a small toaster oven baking sheet.

  2. Roast for 8-10 minutes until the asparagus is tender and the garlic edges have gone a little golden and slightly crispy. Pull them out and let them cool for a few minutes. Leave the toaster oven on — you'll need it.

Prep the Muffin Cups

  1. Melt the butter (I just do this in a small bowl in the toaster oven for about 45 seconds). Brush a 6-cup silicone muffin pan generously with the melted butter — really get into the sides. Dust each cup with a pinch of grated Parmesan and tap out any excess. This step is what gives you those crispy, slightly cheesy edges.

  2. Divide the roasted asparagus and garlic evenly among the 6 cups. Don't pack them too tight; you want egg to flow around everything.

Make and Bake the Frittata Bites

  1. Whisk the eggs, milk, salt, pepper, and red pepper flakes together until smooth and a little frothy. Pour the egg mixture evenly over the asparagus in the cups, filling each one about three-quarters full.

  2. Carefully set the muffin pan in the toaster oven and bake at 375°F for 13-15 minutes. They're done when the tops are just set — a tiny jiggle in the very center is fine, they firm up as they cool. Don't walk away at the 12-minute mark; toaster ovens vary and these can go from perfect to rubbery fast.

  3. Let them sit in the pan for 3-4 minutes before running a butter knife around the edges and popping them out. They should release pretty cleanly if you buttered the cups well.

Make the Whipped Ricotta

  1. While the frittata bites bake, stir together the ricotta, lemon zest, lemon juice, and a pinch of salt until smooth and creamy. That's it. You can use a fork and it'll come together in about 30 seconds.

Assemble and Serve

  1. Plate the warm frittata bites, spoon a small dollop of whipped ricotta onto each one, scatter the chives on top, and finish with a pinch of flaky sea salt. Serve right away.

Notes

Silicone muffin pans work best here because you get clean release without fighting with the pan. If you only have a metal muffin tin, butter it very generously and add a second Parmesan dusting for insurance. You can swap asparagus for whatever roasted veg you have — thin-sliced zucchini, broccolini, or roasted cherry tomatoes all work. Leftovers keep in the fridge for up to 3 days; reheat them in the toaster oven at 325°F for about 5 minutes. They're honestly pretty good cold too, eaten standing over the sink.
