I made this for the first time on a Tuesday when I had nothing in the fridge except a dusty package of shelf-stable gnocchi and a half-pint of cherry tomatoes that needed to be used up. Wasn’t expecting much. Turned out to be one of those accidental meals I’ve made a dozen times since. The trick is roasting the gnocchi completely dry — straight from the package, no boiling — directly on a hot pan. They come out golden and a little chewy on the inside, with crispy edges that you just can’t get any other way.

You need a good rimmed quarter sheet pan for this. A flat pan or one that’s too big lets everything slide around and steam instead of roast. Once the gnocchi are done, the browned butter with garlic gets poured right over the top — and that’s the step that makes this taste like you actually tried.

The whole thing comes together in under 30 minutes, which is shorter than delivery, and it uses pantry ingredients most people already have. If you don’t already have a dependable countertop toaster oven that can hold a steady 425°F, this recipe is a good excuse to get one — the high heat is what makes the whole thing work.

Serves two generously, or one very hungry person. Basil on top is not optional in my opinion.

  1. Preheat your toaster oven to 425°F on the roast or bake setting. Let it fully preheat — this matters more than people think for getting the gnocchi crispy instead of steamed.

  2. Toss the gnocchi and halved cherry tomatoes on a rimmed toaster oven baking sheet (quarter sheet pans fit most toaster ovens perfectly). Drizzle with olive oil, add salt, pepper, and red pepper flakes if using, and toss everything together with your hands until coated. Spread into a single layer — don't pile them up.

  3. Roast for 18-20 minutes, stopping to shake the pan once around the 10-minute mark. The gnocchi should be golden and a little blistered, and the tomatoes should be soft and starting to collapse. Pull the pan when you see some brown edges on the gnocchi; a little color is exactly what you want.

  4. While the gnocchi finishes its last few minutes, melt the butter in a small saucepan over medium heat on the stovetop. Add the sliced garlic and let it all cook together, swirling occasionally, until the butter turns a light amber and smells nutty — about 3 to 4 minutes. Watch it closely. Pull it off the heat the moment it starts to smell toasty.

  5. Pour the browned garlic butter directly over the hot gnocchi and tomatoes on the pan. Toss gently. Scatter the Parmesan over the top and return the pan to the toaster oven for just 2 more minutes, enough to melt the cheese.

  6. Top with torn basil and eat immediately. This doesn't hold well — the gnocchi lose their crispiness fast, so serve it straight from the pan.

Notes

Don't boil the gnocchi first. I know it feels wrong, but roasting them dry from the package is exactly what makes the outside crispy. Boiling first just makes them soft and sad. If your toaster oven runs small, do this in two batches rather than cramming everything onto one crowded pan. The brown butter is the part people skip when they're lazy and they always regret it — the nuttiness is what makes this feel like a real meal instead of a snack. Leftovers can be reheated at 400°F for about 5 minutes, though they won't get quite as crispy the second time around.
