I made this flatbread on a whim one night when I had half a pear sitting in my fruit bowl that wasn’t going to last another day. Didn’t expect much. Ended up making it two more times that week. That’s kind of how this one goes.

The brown butter is the thing that makes it. Takes maybe three extra minutes on the stovetop, and it completely changes how the pear slices taste once they come out of the toaster oven — deeper, nuttier, almost caramel-like even before the honey goes on. I’ve made this with olive oil instead and it’s fine, but it’s not the same. If you’ve got a toaster oven baking sheet with low sides, use it — it helps the flatbread edges crisp up instead of just getting soft.

Gorgonzola is funky and a little aggressive on its own, but it mellows out beautifully when it melts. The sweetness from the pear and honey pulls it back, and the candied walnuts add this salty crunch that you’d miss if they weren’t there. It’s the kind of thing that sounds fancy but comes together faster than most pasta recipes.

A half-sheet toaster oven pan fits two naan flatbreads side by side in most mid-size units. If you’re working with a compact model, just do one at a time. If you’ve been thinking about upgrading your setup, a toaster oven with convection makes a real difference for getting those flatbread edges genuinely crispy rather than just warm. Either way, this recipe works — it just takes a minute or two longer without the fan.

Candy the walnuts first

  1. Preheat your toaster oven to 375°F. Line a small baking sheet with foil — the honey makes a mess otherwise, trust me.

  2. Toss the chopped walnuts with 1 tablespoon honey, the flaky salt, and the cayenne if you're using it. Spread them out on one half of the foil-lined pan and roast for 6–7 minutes until they smell toasty and the honey is bubbling. Pull them out and set aside. They'll harden as they cool.

Brown the butter and roast the pears

  1. While the walnuts cool, melt the butter in a small skillet on your stovetop over medium heat. Swirl it around for about 2–3 minutes until it smells nutty and you see little brown specks at the bottom. Take it off the heat immediately. This step is worth it — don't skip it.

  2. Toss the pear slices in the brown butter right in the pan, just to coat them.

  3. Increase toaster oven temp to 425°F. Lay the pear slices in a single layer on your baking sheet and roast 8–10 minutes until the edges are golden and slightly caramelized. They don't need to be fully cooked through — they'll finish on the flatbread.

Build and bake the flatbreads

  1. Brush each flatbread with olive oil. Scatter about half the Gorgonzola crumbles evenly across both flatbreads — you want the cheese on the bottom so it melts into the bread a bit.

  2. Lay the roasted pear slices on top. Add the remaining Gorgonzola. Sprinkle with black pepper and thyme leaves if using.

  3. Slide the flatbreads directly onto the toaster oven rack, or use your baking sheet. Bake at 425°F for 7–9 minutes until the edges of the flatbread are crispy and the cheese is melted with a few golden spots.

  4. Pull them out. Scatter the candied walnuts over the top, then drizzle with honey. Slice and eat immediately — these don't hold, and you wouldn't want them to anyway.

Notes

Pear ripeness matters a lot here. Too soft and they turn to mush; too hard and they won't caramelize. You want pears that give just slightly when you press near the stem. Bosc holds up better than Bartlett for roasting. If you can't find Gorgonzola, Roquefort or any crumbly blue cheese works. You can swap walnuts for pecans if that's what you have. The candied nut step can be done a day ahead — store them at room temperature in a small zip bag.
