Some mornings call for something that looks impressive but doesn’t require actual effort. This is one of those. Roasted strawberries are one of my favorite things to make in the toaster oven — they concentrate in flavor, get jammy and a little sticky, and they smell incredible while they’re cooking. Pile them onto crunchy sourdough with herby, lemony ricotta and you’ve got something that feels like a restaurant breakfast without the $18 price tag.

The brown butter is optional in theory, but I’d strongly encourage you not to skip it. Brushing it onto the bread before toasting adds this nutty, almost caramel-like depth that plain olive oil just doesn’t get you. If you’re doing this regularly, a good toaster oven baking sheet with a rim makes the strawberry roasting step a lot easier — the juices run and you don’t want them dripping onto the heating element.

This works for breakfast, a lazy brunch, or honestly dessert if you lean into the honey drizzle. I’ve served it to guests and gotten compliments every time. The whole thing comes together in under 25 minutes, start to finish, using a reliable toaster oven and one small saucepan. That’s pretty much the whole setup.

Roast the Strawberries

  1. Preheat your toaster oven to 400°F on the bake setting.

  2. Toss the halved strawberries with the balsamic vinegar, honey, and a pinch of salt right on a small rimmed toaster oven baking sheet or in a foil-lined pan. Spread them in a single layer — don't crowd them or they'll steam instead of caramelize.

  3. Roast for 14 to 16 minutes, until they're jammy, slightly shrunken, and the edges are getting a little dark. Set aside and let them cool for a few minutes while you handle everything else.

Brown the Butter and Toast the Almonds

  1. Melt the butter in a small saucepan over medium heat on your stovetop. Let it cook, swirling occasionally, until it smells nutty and the milk solids turn golden brown — about 3 to 4 minutes. Pour it into a small bowl right away so it doesn't keep cooking.

  2. Add the sliced almonds to the same pan (no need to wipe it out) over medium-low and toast them for 2 minutes, stirring constantly. They go from golden to burnt fast, so stay close. Set aside.

Toast the Bread and Assemble

  1. Switch your toaster oven to the toast or broil setting. Brush one side of each sourdough slice lightly with the brown butter, then toast until golden and crisp — about 3 to 4 minutes depending on your machine. You want real crunch, not just warmth.

  2. While the bread toasts, stir together the ricotta, lemon zest, vanilla, and honey in a small bowl until smooth. That's it.

  3. Spread a generous layer of the ricotta mixture onto each warm toast slice. Spoon the roasted strawberries on top, including any of the jammy juices pooled on the pan. Scatter the toasted almonds over everything, drizzle with a little extra honey, and finish with a pinch of flaky salt.

  4. Eat immediately. The contrast between the crunchy toast and the soft, juicy berries is the whole point, and it does not hold well.

Notes

Frozen strawberries work in a pinch — just add 2 to 3 extra minutes of roasting time and don't expect quite as much caramelization. If your ricotta is watery, drain it in a fine mesh strainer for 20 minutes first. Thick-cut bread is important here; anything thinner than half an inch will get soggy under the berries too fast. I've also made this with whole-milk cottage cheese blended smooth when I was out of ricotta — not identical, but honestly pretty good.
