Thirty minutes later it was the best thing I’d made all month, which is slightly embarrassing but also great. The toaster oven does real work here — it blasts heat in a small enclosed space, which means your tomatoes actually blister and your chickpeas get legitimately crispy instead of just warm.
The whipped feta is the part people ask about. You make it in a blender in about a minute — block feta, Greek yogurt, lemon, olive oil — and it ends up silky and tangy in a way that pre-crumbled feta could never pull off. Spreading it under the hot orzo means it barely melts around the edges while staying cool and creamy in the center. Get everything ready

Preheat your toaster oven to 425°F on the bake or roast setting. Cook the orzo in salted boiling water for about 2 minutes less than the package says — it'll finish cooking in the oven. Drain it and toss with 1 tablespoon of olive oil so it doesn't clump.

Make the whipped feta now so it has time to come together. Break the feta into a small food processor or blender with the Greek yogurt, lemon juice, and olive oil. Blitz until it's smooth and creamy, about 45 seconds. Taste it — it should be tangy and rich. Set aside at room temp.
Roast the tomatoes and chickpeas

On your toaster oven's baking pan (or a small rimmed sheet pan that fits), toss the dried chickpeas with 1 tablespoon olive oil, the smoked paprika, salt, pepper, and oregano. Spread them out on one half of the pan. On the other half, toss the cherry tomatoes with the sliced garlic and the remaining tablespoon of olive oil. A small pinch of salt over the tomatoes too.

Roast at 425°F for 18 minutes. The tomatoes should be blistered and starting to collapse. The chickpeas should look dry and a little golden — not fully crispy yet, but getting there.

Pull the pan out. Scatter the cooked orzo over everything and give it a gentle stir to combine with all the tomato juices on the pan. Push it back in for another 8 to 10 minutes until the orzo picks up some color on the edges and the chickpeas are properly crispy. Keep an eye on it around the 7-minute mark; toaster ovens run hot in spots.
Brown butter and serve

While the orzo finishes, melt the butter in a small saucepan or even a metal measuring cup set directly on the toaster oven rack for the last 3 minutes. You want it golden brown and nutty-smelling, not black. Watch it.

Spread the whipped feta across the bottom of a serving dish or just go straight onto plates. Spoon the hot orzo and chickpea mixture over the top — the heat will soften the feta just slightly around the edges, which is exactly what you want.

Drizzle the brown butter over everything, then scatter the torn basil, lemon zest, and red pepper flakes on top. Eat immediately.

Drying the chickpeas is non-negotiable for crispiness — spend an extra minute with a clean kitchen towel. The whipped feta keeps in the fridge for 3 days and is excellent on literally everything. If your toaster oven is on the smaller side, roast the chickpeas and tomatoes in two batches rather than crowding the pan, or the tomatoes will steam instead of blister. Leftovers reheat well at 375°F for about 8 minutes — add a splash of water to the orzo before reheating so it doesn't dry out.
