I’ve made a lot of zucchini fritters over the years, and most of them were just… fine. Kinda soft in the middle, a little bland, the kind of thing you eat because you have too much zucchini and not because you actually want them. These are different. The brown butter in the batter is the thing that changed everything for me — it adds this nutty, slightly caramel-y flavor that makes plain zucchini taste genuinely interesting. And baking them in the toaster oven at high heat gets you that crispy, lacy edge without standing over a stovetop and babysitting a skillet.

You’ll want a good toaster oven baking pan for this — the shallow, wide surface area helps the fritters spread and brown evenly rather than steam. If your pan is too small or has high sides, you’ll get paler, softer results. Not the end of the world, but it’s worth using the right setup if you have it.

The whipped lemon feta is fast — like, two minutes in a small food processor fast — and it genuinely makes the whole plate feel like more of a meal. Creamy, tangy, a little sharp. It’s good on basically everything, and I always make a little extra to use on toast the next morning. If you don’t have a food processor, a fork and some elbow grease will get you there, though the texture will be more crumbled than silky.

This works as a weeknight dinner with a simple green salad, or as an appetizer if you make them slightly smaller. A compact toaster oven handles this recipe perfectly — no need to heat up your whole kitchen for a batch of eight fritters.

Prep the Zucchini

  1. Grate the zucchini on the large holes of a box grater. Pile it into a clean kitchen towel or a few layers of paper towels and squeeze out as much water as you possibly can — this step really matters. Soggy fritters don't crisp up the way you want, and you'll be annoyed at yourself later if you skip it.

  2. Transfer the squeezed zucchini to a large bowl. Add the corn, eggs, flour, Parmesan, scallions, garlic powder, smoked paprika, salt, and black pepper. Stir until everything is evenly combined. The batter should hold together when you press a spoonful — if it looks a little wet, add another tablespoon of flour.

Brown the Butter

  1. In a small saucepan or skillet over medium heat, melt the butter and let it cook for about 2 to 3 minutes, swirling occasionally, until it smells nutty and turns a light amber color. Pull it off the heat immediately and let it cool for a minute or two. Stir half of it into the fritter batter and keep the rest for brushing.

Bake the Fritters

  1. Preheat your toaster oven to 425°F on the bake setting. Line your toaster oven pan with parchment paper and brush it lightly with a little of the remaining brown butter.

  2. Scoop the batter into 8 mounds on the prepared pan — about 3 tablespoons each. Flatten each one gently with the back of a spoon into a rough disc, about half an inch thick. Brush the tops with the remaining brown butter.

  3. Bake for 18 to 22 minutes, flipping carefully at the 12-minute mark, until both sides are deep golden and the edges look genuinely crispy. Toaster ovens vary a lot, so start checking around 18 minutes. Mine takes exactly 20.

Make the Whipped Lemon Feta

  1. While the fritters bake, add the feta, Greek yogurt, olive oil, lemon zest, and lemon juice to a small food processor or blender. Blitz until smooth and creamy, about 30 to 45 seconds. Taste it — if you want more lemon, add it. Stir in the red pepper flakes if you're using them.

Serve

  1. Spread a generous spoonful of whipped lemon feta on each plate or a big platter. Stack the hot fritters on top, scatter over the fresh dill or parsley, and squeeze a little lemon over everything. Eat immediately — they're best right out of the oven.

Notes

Squeezing the zucchini dry is the single most important step here. Don't rush it. // Pre-crumbled feta has anti-caking agents and won't whip as smoothly — worth grabbing a block if your store has one. // These reheat surprisingly well: pop leftovers back in the toaster oven at 375°F for 5 to 6 minutes and they crisp right back up. // You can swap the corn for finely diced red bell pepper if corn isn't in season. // The whipped feta keeps in the fridge for up to 3 days and is also excellent on toast.
