I made these carrots for the first time on a night when I had almost nothing in the fridge and even less motivation. Just a bag of carrots, some Dijon I’d been meaning to use up, and cream cheese that desperately needed a purpose. Twenty minutes later I was scraping the pan. Honestly didn’t expect much.
The brown sugar and Dijon thing sounds like it shouldn’t work — sweet and sharp — but the heat mellows the mustard into something almost nutty and the sugar just barely caramelizes at the edges. It’s not candy. It’s better than that. A good toaster oven baking sheet makes a real difference here because you want full contact with the heat, not some warped little pan that came with the machine.
The whipped cream cheese underneath is the part people ask about. It takes maybe three minutes to make and it turns the whole thing from a side dish into something you want to eat with a spoon. Cool and tangy against the hot, sticky carrots — it just works. If you’ve got a reliable toaster oven that hits consistent temps, you’re basically there.
This comes together fast enough that it works on a Tuesday, but it looks pulled-together enough to put in front of company. Serve it as a side with roasted chicken or fish, or just eat it straight off the pan like I did the first time. No judgment.
Toaster Oven Crispy Brown Sugar and Dijon Roasted Carrots with Whipped Herbed Cream Cheese
Tender-crisp roasted carrots glazed with brown sugar and Dijon, served over cool, herby whipped cream cheese. Fast enough for a weeknight, impressive enough to actually want to eat.
Ingredients
Roasted Carrots
Whipped Herbed Cream Cheese

Instructions
-
Preheat your toaster oven to 425°F on the convection roast setting if you have it — regular bake works fine too, just give them an extra 3 minutes.
-
Whisk together the olive oil, brown sugar, Dijon, garlic powder, salt, and pepper in a large bowl. Add the halved carrots and toss until every piece is coated. Don't skip this step thinking you'll just drizzle it on the pan — you want real coverage.
-
Spread the carrots in a single layer, cut-side down, on a toaster oven baking sheet or the included pan lined with foil. Crowding them will steam instead of roast, so if your pan is small, do two batches.
-
Roast for 18 to 22 minutes, flipping once at the halfway point. They're ready when the edges are browned and slightly sticky, and a fork slides in without much resistance. Mine usually hit that sweet spot right at 20 minutes.
-
While the carrots roast, beat the cream cheese with a fork (or use a hand mixer if you want it properly fluffy) with the lemon juice, milk, chives, dill, salt, and pepper until smooth and spreadable.
-
Smear the whipped cream cheese across the bottom of a serving plate or shallow bowl. Pile the hot carrots right on top, scatter over the parsley and flaky salt, and add the walnuts or pepitas if you're using them. Serve immediately.
Notes
Carrots vary wildly in thickness — if yours are really fat, give them 25 minutes or cut them into thirds lengthwise instead. The cream cheese can be made a day ahead and kept in the fridge; just let it sit out for 10 minutes before you spread it or it'll tear. Leftovers reheat okay in the toaster oven at 375°F for about 5 minutes, though the cream cheese is best added fresh. This also works as a light meal on top of toast or alongside eggs.
