So here’s the thing about shakshuka: it doesn’t need to be a whole production. I’d made it on the stovetop probably a dozen times before I tried finishing it in my toaster oven, and honestly the oven version is better. The heat comes from all sides, the sauce bubbles and concentrates at the edges, and the eggs cook way more evenly than when you’re trying to manage a lid and a flame at once.

The roasted red pepper version is my go-to. Jarred peppers add this sweet, slightly smoky depth that canned tomatoes alone just don’t have. Topped with crispy chickpeas for crunch — because the sauce, while great, is entirely soft and needs something — and a quick whipped feta that takes about a minute to make but makes the whole thing feel intentional. You’ll need an oven-safe skillet that fits in your toaster oven, or just a small baking dish. That’s genuinely the only equipment requirement.

This is technically a dinner, but I’ve served it at brunch and nobody complained. It feeds four if you’ve got bread on the side, maybe three if your people are hungry. A toaster oven with a convection setting really does help with the chickpeas, but if yours doesn’t have one, just budget an extra few minutes and check them early and often.

Make the Crispy Chickpeas

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. If you have a convection setting, use it — makes a real difference for the chickpeas.

  2. Toss the dried chickpeas with olive oil, smoked paprika, cumin, and salt on a small rimmed baking sheet or the toaster oven pan. Spread them out so they're not touching each other. Roast for 18-22 minutes, shaking the pan once around the 10-minute mark, until they're golden and audibly crunchy. Set aside.

Make the Sauce

  1. While the chickpeas roast, warm 2 tablespoons of olive oil in a medium oven-safe skillet over medium heat on your stovetop. Add the onion and cook for about 6 minutes until softened and a little golden at the edges. Add the garlic and cook for one more minute.

  2. Stir in the roasted red peppers, crushed tomatoes, smoked paprika, cumin, coriander, cayenne, salt, and sugar. Let it simmer on medium-low for about 8 minutes, stirring occasionally. The sauce should thicken slightly and smell really good. Taste it — add more salt or cayenne if needed.

  3. Take the pan off the heat. Use a spoon to make 4 shallow wells in the sauce, then crack one egg into each well. Season the eggs with a small pinch of salt.

Bake the Eggs

  1. Carefully transfer the skillet into your toaster oven (still at 425°F). Bake for 7-10 minutes. Check at 7 — you want the whites set but the yolks still a bit jiggly. Every toaster oven runs slightly different, so start checking early.

Whip the Feta

  1. While the eggs bake, blend the feta, Greek yogurt, olive oil, and lemon juice together in a small food processor or blender until smooth and creamy. About 45 seconds. If it's too thick, add a tiny splash of water.

Assemble and Serve

  1. Pull the pan out of the oven. Scatter most of the crispy chickpeas over the top (save some to snack on, honestly). Drop spoonfuls of whipped feta around the eggs. Finish with fresh parsley and serve straight from the pan with toasted bread or warm pita on the side for scooping.

Notes

Drying the chickpeas well is non-negotiable if you want them crispy — pat them with a paper towel and let them air dry for a few minutes after rinsing. If your toaster oven runs small, you can bake the sauce in a 9-inch round baking dish instead of a skillet — just make the sauce on the stovetop first, pour it in, then add the eggs and bake. Leftover sauce (without eggs) keeps in the fridge for 4 days and reheats beautifully. The whipped feta keeps separately for up to a week. I wouldn't reheat already-baked eggs — just crack fresh ones into reheated sauce.
