I started making these on a Tuesday when I had half a can of black beans and no real plan. The harissa-corn combo happened almost by accident and I’ve made it at least a dozen times since. Something about the way the corn gets a little smoky and caramelized in the toaster oven before it even goes into the quesadilla makes a real difference — it’s not just filler, it actually tastes like something.
The toaster oven is genuinely perfect for quesadillas. Better than a skillet in some ways, because you can cook the whole thing flat and flip it once without everything sliding out. You’ll want a toaster oven baking sheet that fits your tray — ideally one with low or no sides so the heat circulates evenly underneath. A regular quarter sheet pan usually fits most countertop models fine.
The lime crema takes about two minutes to throw together and it genuinely makes the whole dish. I know sour cream and lime sounds simple, but the grated garlic in there does something. Don’t skip that part. It’s the thing people always ask about.
If you’re cooking for four, you’ll need to do two batches unless you’ve got a bigger large toaster oven that can fit two quesadillas flat at once. The first batch stays warm on a cutting board while the second cooks — they don’t really get soggy, which I was worried about before I tested it.

Prep the filling

Heat your toaster oven to 425°F on the bake setting. If yours runs cool (mine definitely does), give it a few extra minutes to actually get there.

Toss the corn with olive oil, cumin, garlic powder, and salt on a small baking sheet or the toaster oven pan. Spread it out in a single layer and roast for 8–10 minutes until some edges get a little charred and golden. That char is the whole point.

Pull the corn out and toss it in a bowl with the drained black beans and harissa paste. Stir it together and taste — add more harissa if you want more heat. I usually do.
Make the crema

Mix together the sour cream, lime zest, lime juice, grated garlic, cilantro, and salt in a small bowl. Stir well. Refrigerate until you're ready to eat.
Assemble and cook the quesadillas

Mix the softened butter with a tiny pinch of salt. Lightly butter one side of each tortilla — this is what gets you a properly crispy exterior instead of something sad and pale.

Lay two tortillas butter-side down on the toaster oven pan. Scatter half the pepper jack and cheddar over each one, leaving a small border. Spoon the corn and bean filling evenly over the cheese, then top with the remaining cheese. Place the second tortillas on top, butter-side up.

Bake at 425°F for 6–7 minutes. Flip carefully using a spatula — they'll be pretty fragile at this point, just go slow. Bake another 5–6 minutes until both sides are golden and the cheese is fully melted.

Let them sit for 2 minutes before cutting. I always skip this step and burn my mouth every time. Don't be me.

Slice into wedges and serve with the lime crema alongside.
Notes
Harissa brands vary a lot in heat level. If yours is on the milder side, a pinch of cayenne in the filling helps. You can swap pepper jack for plain mozzarella if you're feeding kids, though you'll lose some of that kick. Leftovers reheat great — put them back in the toaster oven at 375°F for 4–5 minutes rather than microwaving, which turns the tortilla rubbery. If your toaster oven is on the smaller side, cook one quesadilla at a time.
