In a large bowl, whisk together the harissa, 1 tablespoon of the honey, the olive oil, cumin, salt, and pepper. Add the carrot sticks and chickpeas and toss until everything's coated.

Drying the chickpeas thoroughly before roasting is what separates crispy from chewy — don't skip it. If your harissa is very spicy (some brands are intense), cut it to 1.5 tablespoons and add a little extra olive oil. Leftovers are good cold the next day tossed into a grain bowl, though the chickpeas will soften in the fridge. The whipped goat cheese keeps in an airtight container for up to 3 days. This works well as a side dish in smaller portions too — just halve the goat cheese and serve alongside grilled fish or roasted lamb.
