I made these on a Tuesday when I had four big portobello caps sitting in the fridge and absolutely no plan for them. Stuffed mushrooms always sound fancier than they are. This version came together in under 35 minutes total, and my partner asked if we could just have them every week. So. That’s where we’re at.
The harissa does real work here. It adds this low, smoky heat that plays really well against the creamy gouda, and the roasted red peppers stretch the filling without making it bland. The lemon panko on top is the part I’m most smug about — it stays crunchy even as the mushrooms get juicy underneath, which is not a small thing. If you’ve got a reliable toaster oven, this is exactly the kind of recipe that makes you wonder why you ever bothered heating up the big oven for a weeknight dinner.
Four portobellos fits perfectly on a standard toaster oven baking pan without crowding, which matters for getting actual roasting rather than steaming. Give them a bit of space and don’t cover them — you want that moisture to escape. The whole thing is vegetarian, filling enough to be a main with a simple salad alongside, and genuinely something you’d want to eat rather than just something you made because it was healthy.
Toaster Oven Crispy Harissa Roasted Red Pepper and Gouda Stuffed Mushrooms with Lemon Panko
Big portobello mushrooms packed with smoky gouda, harissa, and roasted red pepper, topped with crunchy golden panko and a squeeze of lemon. Ready in about 30 minutes in your toaster oven.
Ingredients
Mushrooms
Filling
Panko Topping
Instructions
-
Preheat your toaster oven to 400°F on the bake setting. Line your toaster oven pan with foil — cleanup is so much easier and the mushrooms won't stick.
-
Brush the portobello caps all over (top and bottom) with 1 tablespoon of olive oil and sprinkle the gill side with kosher salt. Place them gill-side up on the pan.
-
Finely chop the reserved mushroom stems. Heat the remaining tablespoon of olive oil in a small skillet over medium heat, add the stems and garlic, and cook about 3 minutes until softened. Set aside to cool slightly.
-
In a bowl, mix together the cream cheese, harissa paste, shredded gouda, roasted red peppers, cooked stems and garlic, and parsley. Stir until combined — it'll look a bit chunky and that's exactly right.
-
Spoon the filling evenly into each mushroom cap, packing it in and mounding it up a little. Don't be shy.
-
In a small bowl, toss the panko with 1 tablespoon olive oil, lemon zest, and black pepper. Sprinkle generously over each stuffed mushroom.
-
Roast in the toaster oven for 18 to 22 minutes until the mushrooms are tender, the cheese is bubbling, and the panko is a deep golden brown. If the panko isn't quite there at 20 minutes, switch to broil for 1 to 2 minutes — just watch it.
-
Let them rest for a couple minutes before serving. Scatter extra parsley on top and serve with a lemon wedge if you have one handy.
Notes
Pat the roasted red peppers really dry — excess moisture from jarred peppers is the main reason the filling turns watery. Smoked gouda makes a noticeable difference here, but regular gouda or even sharp cheddar works fine. Harissa paste varies a lot in heat by brand; start with 1 tablespoon and taste before stuffing if you're not sure about yours. These reheat well in the toaster oven at 375°F for about 8 minutes — better than the microwave, which makes the panko soggy.
