I made this on a Tuesday when I had a bunch of carrots going soft in the drawer and a block of halloumi I’d been ignoring for a week. Threw it together mostly on instinct and it turned out to be one of those meals I’ve made six times since. That’s the whole story.

The thing about halloumi is that it’s basically designed for high, dry heat. A toaster oven is actually ideal for it — you get that direct top heat that crisps the outside without turning the cheese into a puddle. Pair it with honey-glazed carrots, which go sticky and caramelized and almost jammy in the same oven, and you’ve got something that feels a lot more put-together than the effort warrants. If you don’t already have a toaster oven baking pan that fits your machine, it’s worth grabbing one — the right pan size makes a real difference in how evenly things roast.

The couscous is the no-cook part of this, which I appreciate. Boiling water, five minutes, done. I use vegetable broth instead of water because it makes the couscous taste like something rather than nothing, and I add fresh mint if I have it and skip it if I don’t. Fresh parsley and lemon are non-negotiable though. The whole bowl comes together in under 35 minutes, which on a weeknight feels like a small miracle.

One note on halloumi: buy it from a Middle Eastern grocery if you can. The stuff from the regular supermarket is fine, but there’s a real quality difference. Also, pat it dry before it goes in the oven — I’ll say it again in the instructions but it bears repeating. Roast the Carrots

  1. Preheat your toaster oven to 425°F on the roast or bake setting. Line your toaster oven pan with foil — trust me, the honey glaze will weld itself to an unlined pan.

  2. In a bowl, whisk together 1.5 tablespoons of the olive oil, the honey, minced garlic, cumin, red pepper flakes, black pepper, and salt.

  3. Toss the carrots in the honey-garlic mixture until they're well coated. Spread them in a single layer on the pan — don't pile them up or they'll steam instead of roast.

  4. Roast at 425°F for 14 minutes, then flip the carrots and push them to one side of the pan.

Add the Halloumi

  1. Pat the halloumi slices dry with a paper towel. This step matters — wet halloumi won't get that golden crust, it just kind of sits there.

  2. Brush the halloumi slices lightly with the remaining olive oil on both sides. Lay them in a single layer on the empty half of the pan next to the carrots.

  3. Return the pan to the toaster oven and roast for another 7 to 8 minutes, until the halloumi is golden and the carrots are caramelized and tender when poked with a fork. The edges of the carrots should look a little sticky and dark. Good.

Make the Couscous

  1. While the carrots are roasting, combine the couscous, olive oil, and salt in a heatproof bowl. Pour the boiling broth (or water) over the top, stir once, then cover tightly with a plate or plastic wrap and let it sit for 5 minutes.

  2. Fluff with a fork, then stir in the parsley, mint, and lemon juice. Taste it — it might need a pinch more salt or another squeeze of lemon.

Assemble

  1. Spoon the couscous into bowls. Top with the roasted carrots and halloumi slices.

  2. Drizzle with a little Greek yogurt if you're using it, squeeze fresh lemon juice over everything, and finish with a pinch of flaky salt. Eat immediately — halloumi goes rubbery when it cools down, and that's not a good time.

Notes

Halloumi cools fast and gets chewy, so get this to the table right away. If you're cooking for two, cut everything in half — the carrots will actually roast a little faster with less on the pan. You can swap couscous for pre-cooked rice or quinoa if that's what you have. The honey-garlic glaze also works really well on sweet potatoes if you want to mix it up. Leftovers keep in the fridge for up to 2 days; reheat the carrots and halloumi in the toaster oven at 375°F for 5 minutes rather than the microwave.
